Can I just say that I have died and gone to heaven. Cheesecake stuffed strawberries….how have I not made these before?! I’m serious. They are amazing! I ate four of them yesterday. I could have eaten more but I restrained myself. It was not easy, I assure you.

Making up the filling was a breeze too.  It’s cream cheese, powdered sugar and vanilla extract.  The addition of almond extract to the filling would be tasty too.  To finish, I dipped the stuffed strawberries in graham cracker crumbs. It gave the strawberries the total cheesecake taste. A drizzle of chocolate would be amazing too. In fact, I think I’m going to try that next time…yum!

Cheesecake-Stuffed-Strawberries (2)

Cheesecake Stuffed Strawberries:

1 pound large strawberries

8oz. block cream cheese – soft

3 – 4 tablespoons powdered sugar (depends on how sweet you want the filling)

1 teaspoon vanilla extract (or use almond, lemon, etc. )

Graham cracker crumbs

Instructions:

Rinse strawberries and cut around the top of the strawberry.  Remove the top and clean out inside with a paring knife if necessary.  I found most of the strawberries already had a nice hollow center so that step was not necessary. If you want to stand your strawberries upright (like in the picture) slice a bit off the bottom. One strawberries are prepped set aside.

Combine cream cheese, powdered sugar and vanilla with a mixer or by hand. Add cream cheese mix to piping bag and fill strawberries.  Once strawberries are filled dip the top in graham cracker crumbs.  Devour and fall in love.

You could also drizzle or dip strawberries in chocolate if desired.

Enjoy!!!

I stored my stuffed strawberries in the fridge although I find they taste best the day,or second after, they are made.

    I love strawberries and cream cheese. I have a trick to de-steming strawberries.

    Using a firm straw (I save Jack in the Box ones), place the straw at the bottom of the berry and push it up thru the middle. It will catch the stem and pop it out. then to fill them cut out a bit more of the top.

    You could totally do these low carb. Substitute the sugar with splenda and mix up crushed almonds with butter and splenda (which is what I use for my crusts) and use this in place of the graham crackers. Can’t wait to try it

    So excited to try these!! Would it be fine to prepare the strawberries and the filling the night before, without filling the strawberries, then fill the next afternoon before serving?

      I think that would be fine. As long as your strawberries are nice and fresh I don’t see why they wouldn’t last overnight. I would also recommend not putting on the graham topping until you are a ready to serve. If it sits for too long it can get soggy. I hope you enjoy the berries! They are a favorite in our house :)

    These turn out fantastic! I just made them and in addition to doing some with graham cracker crumbs, I also did some with dark chocolate chips and I think I liked those better. I think using strawberry cream cheese would also be a nice sweet twist.

    I was very excited about these but was disappointed in these. I used the exact recipe and had a lot of cream cheese left over (and I did use larger strawberries with some smaller ones too). They did not taste that great; would have tasted better if u could get more cream chz filling in it but all u can taste is strawberry.

    Just tried these and they were yummy!! I drizzled them with a bit of white chocolate (on the berry itself) and piped the cream cheese so it raised to a pretty point on the top. I think if you use big enough berries that are ripe enough, you don’t have to hollow them out and you can fit lots of filling in them. Definitely a great shot of sweet and richness without feeling too guilty about it :)

    these are fantastic! i put a semi-sweet chocolate chip at the bottom then filled it with the frosting so there was a chocolate surprise at the bottom! also on a different strawberry, i put sliced almonds on the top… DELICIOUS!!!

    I literally just made these and they are absolutely ridiculous! They are super fast and super easy to make. Tip: you can totally use small strawberries if you cant find large ones, they become like cute cheesecake bites…and sprinkle powdered sugar on top as well=double the goodness!

  95. when i make these i add toasted pecan pieces to cream cheese. if you want chocolate you could dip in chocolate almond bark. be sure to keep refrigerated.

    I tried the original recipe on here and it was delicious, but then my culinary curiosity took over and I used strawberry cream cheese instead and then added some fresh mashed raspberries. I left the vanilla out though, and they were BEYOND DELICIOUS. Amazing idea though :)

    These are great i’ve eaten about ten already. I used almond flakes instead of the biscuit crumbs and ended up using rosewater essence instead vanilla. Still gorgeous.

  136. I made cheesecake stuffed strawberries once before with a chocolate drizzle and they were fabulous. Never thought of including graham cracker crumbs though. Maybe sprinkling some over the chocolate drizzle for added texture? Thanks for the great idea!

  191. I made these for Valentines Day, and they were good but it mainly tasted like Strawberries stuffed with cream cheese, rather than a cheesecake taste? I added the vanilla and actually about 7ish Tablespoons of powdered sugar, and it still tasted like cream cheese. Any thoughts on what I could have done differently? They definitely were good! I just wish they were more cheesecakey :)

      Hi Jackie,

      I’m not sure what to tell you. If you are a fan of Jello cheesecake I’m willing to bet you could make the filling and then stuff it into the cheesecake. Or possible add a packet of Jello cheesecake pudding (just the dry mix) to the cream cheese and see how that tastes. I can’t for sure tell you if it would be good but it doesn’t sound half bad. I’m sorry they were not exactly what you had hoped but I’m glad you enjoyed them anyway :)
