These shrimp tacos with apple pomegranate salsa are sauteed in Cajun seasoning and topped with a delicious salsa made from apples, pomegranates, red onion, cilantro, and lime.

There is something so perfect about the combination of shrimp and fruit salsa. I swear it’s my favorite taco style. If you search my blog, you’ll see that I have three shrimp taco recipes (including this one), each paired with fruit.
I can’t stop, and apparently, won’t stop, pairing my shrimp tacos with some sort of fruit salsa.
For this version, I tossed shrimp in Cajun seasoning and then cooked them in butter and lime juice. The shrimp were spicy and tangy.
I combined sweet red apples with red onion, pomegranate seeds, cilantro, lime juice, and spices for the apple salsa. Hello, fruit salsa perfection!
This entire shrimp taco recipe is a full on play between the flavors of spicy, tart, and sweet. Plus, the slaw gives the perfect crunch to a seafood taco.

How to make shrimp tacos
I love making shrimp tacos with fruit salsa. In this case, the spicy Cajun seasoning on the shrimp pairs perfectly with the sweet and tart apple salsa.
To make the shrimp, you’ll start by tossing your shrimp in Cajun seasoning and cooking them in butter and lime juice. Set aside while you make your fruit salsa.
Add diced apples, pomegranate seeds, red onion, cilantro, lime juice, kosher salt, and black pepper to a mixing bowl. Toss to combine.
Toast your corn tortillas, pile high with shrimp and apple pomegranate salsa, sprinkle with cheese and devour!

Use deveined and cleaned shrimp to save the most on prep time.
Use a tart apple like Granny Smith for a more tart apple salsa.

Shrimp Tacos with Apple Pomegranate Salsa

Ingredients
- 1-1/2 pounds medium-sized shrimp, cleaned and shelled
- 2 tablespoons Cajun seasoning, low salt
- 2 tablespoons unsalted butter
- 2 whole limes, juiced, divided
- 2 sweet red apples, cored and small diced
- 1 small red onion, small diced
- 1/3 cup pomegranate arils
- 1/4 cup minced cilantro
- ½ teaspoon Kosher salt
- ¼ teaspoon black pepper
- 8 small corn tortillas, toasted
- ⅓ cup Cotija cheese, for topping
Instructions
- In a bowl add shrimp and toss with Cajun seasoning.
- In a 12-inch skillet set over medium high heat add butter. Once hot add in the shrimp and half way through cooking add in the juice of 1 lime. Continue cooking until all the shrimp are pink. Set aside.
- While the shrimp cook (or earlier in the day) start making the slaw.
- In a bowl combine apples, red onion, pomegranate arils, cilantro, lime juice, kosher salt and black pepper. Stir to combine.
- To make tacos add 4-5 shrimp per taco onto toasted corn tortilla. Top with desired amount of salsa and cotija cheese.
Notes
- Great sweet apple options are Honeycrisp, Fuji, or Cosmic Crisp.
- Toast your corn tortillas for the best flavor and texture.

I’ve been craving tacos ever since getting back from the cruise and now I want to trash the idea of turkey on Thanksgiving and serve these tacos instead!
