Now, these tacos are not only delicious BUT they are ready in just 30 MINUTES! Shout it from the rooftops these tacos are tasty, easy to make and perfect for the crazy weeknight dinner rush. Plus, can we talk about how delicious any taco is when it’s topped with a creamy slaw? Is a fish taco even a fish taco if it doesn’t come with slaw? No. The answer is no.

To make things easy I decided to not just make fish tacos but I made EASY fish tacos. Instead of breading and frying my fish (you know I hate the smell of frying!) I opted to use Gorton’s fish sticks. You might remember I worked with Gorton’s a few months ago when I made my Asian shrimp po boy sandwich.

Their fish sticks are 100% fish (as they should be!) and have zero fillers. They don’t just make this dish delicious they make this dish easy!

Oh, and that slaw isn’t just your typical mayo based slaw – NOPE. It’s made with lots of fresh squeezed lime juice and tangy plain Greek yogurt. It’s so good! PLUS it’s a great way to get some veggies with your tacos. Who doesn’t need more vegetables in their diet?

Easy Fish Tacos with Citrus Greek Yogurt Slaw

These easy fish tacos with citrus Greek yogurt slaw are the perfect busy weeknight meal. Super crispy fish topped with a crazy easy cabbage slaw made with Greek yogurt and lime juice. You'll love how easy these tacos come together!

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 2 (18 count) boxes Gorton's fish sticks
  • 9 (6-inch) corn tortillas, lightly toasted
  • 1/2 cup plain Greek yogurt
  • 1 lime, zested 
  • 1 lime, juiced 
  • 1/2 teaspoon smoked paprika 
  • 1/2 teaspoon kosher salt 
  • 1/4 teaspoon black pepper
  • 2 cups shredded red cabbage 
  • 2 cups shredded carrots 
  • 1 cup shredded Chinese cabbage 
  • 3 green onions, thinly sliced (white and green parts)
  • 1/3 cup minced fresh cilantro 

Directions:

Bake the fish sticks according to box directions.

While the fish sticks bake lightly toast your tortillas and wrap in foil to keep them warm.

In a medium sized mixing bowl whisk together Greek yogurt, lime juice, lime zest, smoked paprika, kosher salt and black pepper.

To the Greek yogurt mixture add your red cabbage, carrots, Chinese cabbage and green onions. Toss to combine.

To make your tacos add 4 fish sticks per tortilla, top with the desired amount of slaw and sprinkle with cilantro.
