I have a MAJOR love for all things potatoes and bacon. They are seriously a match made in heaven! I have made a few different potato salads on the blog before but this herbed Dijon mustard potato salad might be my favorite. And because it’s mayonnaise free you don’t have to worry about that whole mayonnaise in the hot, hot summer sun.

Also, can we talk about how this salad is PACKED full of bacon? Like, how can you not love all things bacon, herb, and Dijon? It’s a little tangy, it’s a lot bacon-ey (is that a word? I’m guessing no.) and a ton Dijon-ey. <– also, not a word. I really need to work on that whole making up words nonsense.

Now, I ended up using little tiny fingerling red potatoes but baby yellow or white potatoes would work fantastically. Want to know the best part about this potato salad? I got a ton of the ingredients straight from my local ACME Markets store! Plus, because you know I love good quality (and a deal!) I used their Signature brand products, which are available exclusively in ACME Markets. I, of course, used their Signature Farms® bacon and also their Signature Kitchens® Dijon mustard and the Signature Kitchens red wine vinegar. Heck yes!

Then all I did is cook up the potatoes, throw in the crispy bacon, chop up some red onion and pour over the homemade Dijon mustard olive oil herb sauce. No mayo. No problem! It’s creamy, dreamy and oh so perfect for your upcoming summertime festivities.

Herbed Dijon Mustard Potato Salad

This herbed Dijon mustard potato salad is the perfect summertime salad. It’s packed full of flavor and lots of crispy bacon. Plus it’s mayonnaise free so it’s perfect for outdoor picnics and parties!

Yield: 4-6 servings

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

  • 2 pounds baby red fingerling potatoes, halved or quartered if really large
  • 6 slices Signature Farms bacon
  • 1/2 cup small diced red onion
  • 1/3 cup mixed herbs (I used chives, tarragon, and dill)
  • 1/4 cup parsley
  • 1/4 cup olive oil
  • 2 cloves garlic
  • 1 tablespoon Signature Kitchens whole grain Dijon mustard
  • 1 tablespoon Signature Kitchens red wine vinegar
  • Kosher salt and pepper, to taste

Directions:

Add potatoes to a medium-sized pot and cover with cold water. Add to the stove, bring to a boil and cook until soft – about 10 minutes. Remove from the stove, drain and let cool.

While the potatoes are cooking add the bacon to a skillet and cook until crispy. Once the bacon is fully cooked chop up the bacon and set aside.

In a large bowl add cooled potatoes, chopped bacon and red onion, set aside.

In a blender or food processor add herbs, parsley, olive oil, garlic, Dijon mustard and red wine vinegar. Process until smooth and season with the desired amount of kosher salt and black pepper.

Pour the herb mixture over the potatoes and stir to combine.

    What a perfect summer potato salad for picnics and cookouts! You’re so right that potatoes and bacon are a terrific match, and the addition of dijon and red wine vinegar is truly making my mouth water just thinking about it!     I can’t eat mayo so this is perfect for me. I’m a huge potato salad fan but can rarely partake at parties because so many people use mayo. I’m passing this to all my pals who offer to make potato salad for all our summer gatherings. Ha. I love that you added bacon. I mean, the more bacon the better.
