This strawberry mascarpone stuffed French toast is the perfect way to welcome the weekend. Fresh summer strawberries and sweet mascarpone all stuffed between two thick slices of soft challah bread.

I guess I’m more of a girl who loves breakfast but only if she doesn’t have to cook or clean up the breakfast. That’s totally acceptable, right?
However, if there is one breakfast I don’t mind making {if the hubby agrees to clean up} is French toast.
I would have to say it’s hands down my favorite breakfast food and almost always order it when I hit up the diner.
Especially because the diner always uses fresh challah bread to make their French toast. It’s super thick sliced and coated in sweet tons of powdered sugar.

Strawberry Mascarpone Stuffed French Toast
Ingredients
- 8 ounces mascarpone cheese
- 1/3 cup diced strawberries
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla bean paste
- 4 thick slices challah bread
- 4 tablespoons unsalted butter
- Whipped cream optional
- Powdered sugar optional
Instructions
- In a medium sized mixing bowl stir together mascarpone cheese, diced strawberries, powdered sugar, and vanilla bean paste.
- Lay out challah bread and spread 1 tablespoon butter on one side of each slice of bread.
- Flip two slices over and spread half of the mascarpone mixture on each slice of bread. Top with other half of bread, butter side up.
- Add to a large skillet or griddle set over medium heat.
- Heat until the underside is golden brown, flip and cook the other side till golden brown.
- Add to a large plate and top with whipped cream and powdered sugar.
