This strawberry olive oil cake is perfect for spring and summer! It’s super simple to make and perfect for dessert or even breakfast.

I love strawberry season. Especially because I can make ALL THE THINGS studded with farm-fresh strawberries. In this case I took it even further by roasted my berries beforehand.
This results in an extra sweet and juicy berry that pairs perfectly with the fresh thyme and olive oil cake flavor. I like to eat this cake straight from the pan (no judgement please) but it’s also great topped with whipped cream, ice cream, or a spoonful of Greek yogurt.

I love how easy it is to make this delicious olive oil cake. It’s the perfect summertime dessert!
- Combine your berries, brown sugar, kosher salt, and olive oil. Toss to combine and roast until soft and juicy.
- Whisk together dry ingredients and set side.
- Mix Greek yogurt, olive oil, brown sugar, lemon zest, eggs, and vanilla bean paste until thoroughly combined.
- Add the dry to the wet and gently mix together until fully combined.
- Add the batter to a 9×9 pan, top with roasted berries with their juices, and top with sliced almonds.
- Bake until fully cooked and cool, and serve plain or with whipped cream, ice cream, or a spoonful of yogurt.

- 8 ounces strawberries, tops trimmed and halved
- 2 tablespoons brown sugar
- 1 tablespoon olive oil
- ¼ teaspoon kosher salt
For cake:
- 1-½ cups all-purpose flour
- 2 teaspoons fresh thyme leaves
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
- ¼ teaspoon baking soda
- 2 large eggs
- ¾ cup vanilla Greek yogurt
- ½ cup brown sugar
- ⅓ cup olive oil
- 1 tablespoon lemon zest
- 1 teaspoon vanilla bean paste
- ⅓ cup sliced almonds
Instructions
For roasted strawberries:
- Preheat oven to 375 degrees F and line a rimmed baking sheet with parchment paper or a silicone liner.
- Add strawberries, brown sugar, olive oil, and kosher salt to the prepared baking sheet pan and toss to combine.
- Add to the oven and roast for 15 minutes or until the strawberries are soft and juicy.
- Remove from the oven and lower the temperature to 350 degrees F.
For cake:
- Line a 9×9 baking pan with parchment paper and set aside.
- In a medium-sized mixing bowl, whisk together flour, fresh thyme leaves, baking powder, kosher salt, and baking soda, set aside.
- In a large mixing bowl, add eggs, vanilla yogurt, brown sugar, olive oil, lemon zest, and vanilla bean paste. Whisk together until smooth.
- Fold in the dry ingredients to the wet ingredients and mix until just fully combined.
- Add the batter to the prepared 9×9 pan. Top the batter with roasted strawberries, including the juices and sliced almonds.
- Bake for about 30 minutes or until the cake is fully baked and springs back when touched. You can also test the cake by putting a toothpick into the middle of the cake if it comes out clean the cake is fully cooked.
- Let the cake cool and serve.
