Did I tell you that I’m redoing my kitchen? It’s not like a tiny “oh, just painting it a new color” redo. Nope, a big ol’ rip out all the cabinets, tear up the tile, and cut giant holes in the wall type of redo. I’m a little scared.
I’m usually the worst when it comes to spending money to redo things, so the fact that I just paid for the cabinets means I’m serious—like, super serious.
My master bedroom is also in the middle of a facelift. I got a new mattress, a new duvet, a new dresser, two new nightstands (that I hate), and two more new nightstands that I better not hate, or I’m giving up on nightstands.
I also spent $200 on Henn Kim prints for my bedroom because I’m utterly obsessed with everything she does. I’m pretty sure my next tattoo will be of this drawing I now own for my bedroom.

But back to my kitchen. The renovation is slated to start mid-January and last at least six weeks, which means it will probably last eight weeks. This means that I will not have a kitchen for eight weeks.
What does one do without a kitchen for eight whole weeks?
I also can’t wait to talk to you (and share more on Instagram!) about the whole process. I’ve picked out a tile for my backsplash that I LUUUUUUUUUURVE and cannot wait to order. Am I officially an adult now that I can’t wait to order tile?
I also need a new fridge because I’m tired of being the only ice-loving human on Earth who does not own a fridge that makes automatic ice.
I know this is a first-world problem rant, but I want a fridge that makes ice for me and will dispense it from the door.

I’m also super excited about this dip because it involves all of my favorite things – bacon, cream cheese, sweet corn, and hot peppers. Heck to the YASSSSSSSSS QUEEEEEEEEN!
If you’re one of those holiday party-throwing folks, this dip 100% needs to show up to your party. The bacon alone is a reason to devour this dip. There is a whole pound in this baby.
Okay, I know you just read what I said about the bacon and thought, “OK, a whole pound of bacon in a dip? That is insane and not necessary.”
Well, your negativity isn’t needed here, and it is necessary. Okay, maybe I shouldn’t say that. But if you want to add less bacon, go for it. I won’t stop you. I happen to love bacon.
Ways to add flavor to your creamy bacon jalapeno corn dip
- Add fresh herbs such as cilantro to add a fresh burst of flavor
- Use turkey bacon instead of pork bacon if you’re not a fan
- Chop up red bell pepper or add diced pimentos for a pop of color
- Sprinkle in smoked paprika for a Southwest flavor twist

Creamy Bacon Jalapeno Corn Dip

Ingredients
- 1 pound thick sliced bacon, diced
- 2 (11 ounce) cans sweet corn, drained
- 4 green onions, ends trimmed, white and green part thinly sliced but separated
- 1/4 cup roughly chopped pickled jalapeno
- 8 ounces cream cheese
- 2 tablespoons whole milk
- 1/4 teaspoon Kosher salt
- 1/4 teaspoon Black pepper
Instructions
- Set a 12-inch skillet over medium-high heat and add bacon. Cook until the bacon is crispy and browned. Remove bacon from the pan to a paper towel lined plate.
- Remove the bacon grease from the pan, reserving 1 tablespoon of bacon grease.
- Add the skillet back to the stove and add drained corn, white part of the green onion, and jalapeno. Cook just until the onion has started to soften.
- Turn heat to low, add in cream cheese and milk and stir to combine. The cream cheese may take a second to soften but just keep stirring until it’s smooth.
- Remove from the heat and stir in the green part of the onion and crispy bacon. Stir to combine, taste, and season with kosher salt and black pepper. If the dish is salty enough you can opt to leave the kosher salt out of the recipe.
- Serve warm with corn chips, pita chips, or vegetable sticks.
