I love anything potato related – mashed potatoes, cheesy potatoes, potato soup, roasted potatoes, potato salad – you get it. I’m slightly in love with potatoes.

It’s a real Forrest Gump shrimp moment, but with potatoes.

I have been working on getting some more “classic” recipes up on the blog, so today, I’m sharing this super simple air fryer baked potatoes recipe. It’s high time I gave you the basics! I already shared my recipe for The Best Baked Sweet Potatoes, so here is the Russet version.

For toppings, I went with crispy bacon, shredded cheese, and green onions, but really, this humble baked potato is a blank slate for any of your topping desires. If you’re a fan of dinner-sized jacket potatoes, you should try topping it with Slow Cooker BBQ Pulled Pork.

How to make baked potatoes in the air fryer

The best part about making air fryer baked potatoes is the ease!

  1. Wash your potatoes so they have clean skin, and poke each potato with a fork at least five times.
  2. Rub your potatoes with olive oil and sprinkle with salt. This ensures a crispy, flavorful skin.
  3. Add to the air fryer and cook for 20 minutes.
  4. Flip your potatoes and cook for another 20-25 minutes or until the potato is fully cooked.
  5. Top with your favorite toppings such as butter, sour cream, cheese, chili, bacon, or fresh minced herbs.

Baked potato topping options

I’m happy to eat a baked potato as plain as butter, kosher salt, and black pepper. However, sometimes you want a little more! Here are some great ideas for topping your spuds!

  • Meaty toppings: Add crispy bacon, shredded beef, leftover taco meat, pulled pork, or leftover turkey chili.
  • Creamy toppings: Go classic with whipped butter, sour cream, cottage cheese, or Greek yogurt. Get extra fancy by using garlic herb compound butter!
  • Big flavor toppings: Love added flavor? Try minced green onions, chives, or other finely minced fresh herbs.
  • Vegetable toppings: Try steamed or roasted broccoli, sauteed mushrooms, onions, or ratatouli toppings!
  • Cheesy toppings: Do you love a cheesy potato? Try shredded cheddar, cheese sauce, or blue cheese, or add some spice with shredded pepper jack cheese.

It will take about 40-45 minutes to cook a medium-sized Russet potato in the air fryer thoroughly.

This ensures a crispy skin on the outside of the potato.

Nope, it’s not necessary for this recipe.

Preheating the air fryer ensures even cooking. Therefore, it’s highly recommended.

  • Preheat the air fryer to 400 degrees F while you prep your potatoes.
  • Wash the russet potatoes well and pat them dry.
  • Poke each potato at least 5 times with a fork.
  • Rub the potatoes on all sides with olive oil and sprinkle them with kosher salt.
  • Place the potatoes in the air fryer and cook them at 400 degrees F for 20 minutes.
  • Flip the potatoes and cook for 20-25 minutes, or until the potatoes are fork tender.
  • Slice and serve with your favorite toppings. Enjoy immediately or store any leftovers in an airtight container in the fridge for up to three days.

Notes

  • Russet potatoes are the classic “baking” potato. I’m using potatoes that are about 5” long and 2” wide.
  • Olive oil helps the skin on the potato crisp and helps the salt stick. Feel free to use your favorite neutral cooking oil.
  • Kosher salt creates that crisp, salty potato skin that we all love! I highly recommend kosher or sea salt, not table salt.
