This banana bread granola is packed with oats, mashed bananas, banana chips, dark chocolate chips, and lots of cinnamon spice. It tastes just like freshly baked banana bread!

I hate cooking breakfast, but because I’m grown up, I know it’s important to suck it up and eat it – every single day. Luckily, I’ve learned how to make things easier for me, and that “easy” is in the form of granola.
Give me a giant bowl of plain yogurt topped with granola (and maybe some chopped fresh fruit), and I’ll be good until the afternoon.
Especially when that granola is banana bread granola! It literally tastes like freshly baked banana bread but in granola form. It’s made with rolled oats, nuts, mashed bananas, cinnamon, dried banana chips, and mini dark chocolate chips.
It’s so dang good.
My favorite way of serving it is on top of vanilla or homemade yogurt with a drizzle of maple syrup. It’s absolute breakfast perfection.

- Chopped pecans
- Mashed banana
- Melted coconut oil
- Brown sugar
- Vanilla extract
- Cinnamon
- Kosher salt
- Dried banana chips
- Mini dark chocolate chips
How to make banana bread granola
Making homemade granola isn’t hard and doesn’t have to feel intimidating. This version gives you the taste of banana bread but in granola form. It’s so delicious overtop yogurt or even as a tiny little crunchy snack.
- In a large bowl, mix oats and pecans.
- Whisk together mashed banana, melted coconut oil, brown sugar, vanilla extract, and cinnamon in another bowl.
- Stir together the oats with the banana mixture.
- Lay it on a baking sheet pan and sprinkle it with kosher salt.
- Bake until golden and crispy. Make sure to stir the granola as it bakes.
- Let it cool, and stir in dried banana and dark chocolate chips.
- Store in an airtight container for up to 2 weeks.

Banana Bread Granola

Ingredients
- 2 cups old fashioned rolled oats
- ½ cup chopped pecans
- ¼ cup mashed banana, ripe
- ¼ cup melted coconut oil
- 2 tablespoons brown sugar, dark or light brown
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon kosher salt
- ½ cup chopped banana chips
- ⅓ cup mini dark chocolate chips, or mini semi-sweet chocolate chips
Instructions
- Preheat oven to 300 degrees F and line a rimmed baking sheet with parchment paper or silicone liner.
- Add rolled oats and pecans to medium sized mixing bowl, set aside.
- In a small mixing bowl, whisk together mashed banana, melted coconut oil, brown sugar, vanilla extract, and ground cinnamon.
- Pour banana mixture over oat mixture and stir to combine and equally coat.
- Add mixture to the prepared baking dish and sprinkle the top with kosher salt.
- Add to the oven and bake for about 30-40 minutes, stirring every 10 minutes so the granola does not burn. You know your granola is ready to remove from the oven after it's brown and lightly toasted.
- Let the granola cool for about 15 minutes and stir in banana chips and chocolate chips.
- Stir to combine and let completely cool.
- Serve overtop yogurt, sprinkled on oatmeal or eat by the handful.

That sounds delightful. I love granola with my yogurt in the morning. Mmm!
So, here’s the deal – my kids love snackin’ on granola bars, but insist that they don’t like loose granola (I know, weirdos). Now, since they all love banana bread, I’m thinking this may be the granola that changes their tune. Gonna give it a go! If my hunch is wrong, I still win because I get to eat it all by myself.

I’m not a big fan of cooking in the morning either. I’d much rather pour some milk over this yummy granola or throw it on top of my yogurt and call it a day! And I am loving the little bit of chocolate chips-my favorite addition to banana bread! 🙂

Confession, on most mornings, I go to my container of home cooked granola, grab fistfuls of granola and just shove it into my mouth. I know it’s waaaay uncouth, but when hunger strikes, I guess there’s no time for the spoon! Anyway, can’t wait to make this and have it in my pantry!
