Dark and stormy.  That just about sums up the weather these past few days.  I try not to complain, though.  The sun always comes back…thank goodness!  The other night while it was raining I wanted something to perk my spirits up just a bit.  I opened the fridge and there I saw it.  A bottle of spicy ginger beer.  Have you ever had ginger beer? Best stuff ever! I buy it as a treat every once in awhile or else I would just sit there and drink soda all the time. Not exactly something I’m interested in doing.  So, back to my drink.  Now I have the ginger beer in hand but what am I going to mix it with? Then it hit me.  Rum.  A little dark and stormy for the dark and stormy day.  Perfect!  Now all I needed was some rum.  Luckily for me, I had the chance to give Zacapa premium dark rum a try. I had never tried this brand of rum so I was interested in whether or not I would really enjoy the flavor.
Since I also had the pleasure of learning about the rum I thought I would share that with you too. It’s pretty interesting. Apparently most rum base is made with molasses.  However, for their base, Zacapa uses the concentrated first press of sugar cane, known as virgin sugar cane, honey. After the rum is made next comes the aging process.  It takes place in the Quetzaltenango highlands in an aging building called The House Above the Clouds. It’s actually one of the world’s highest aging facilities.  The rum is passed through several casks that previously housed American whiskey, Oloroso sherry, and Pedro Ximenez wines.  This helps give Zacapa premium rum a distinctive (and delicious!) taste.

Now, after learning about the rum I knew I had to give it a try in one of my all time favorite drinks. The dark and stormy.  A truly dark and stormy is just ice, rum and ginger beer.  Sometimes people will add a touch of lime too.  I can take it either way, but I didn’t have any fresh lime in my house so I went the traditional way.  Perfect. Spicy, gingery and just the right amount of delicious rum flavor.  Enjoy!!!

Ingredients:

  • Ice
  • 3 ounces dark rum
  • 6 ounces spicy ginger beer
  • Lime wedge (optional)

Directions:

Pour rum over ice in glass. Fill with ginger beer and squeeze in lime wedge if using.
