This easy whipped chocolate frosting is a chocolate lover’s dream. Full of rich chocolate flavor and a fluffy texture. Perfect on cake, cookies, or by the spoonful.

Saturday is my birthday and I’ll be the big 3-4.
I remember when I turned 30 and I thought I would have an issue with the whole thing.
I didn’t. In fact, I cared very little and was more annoyed at the fact that the Super Bowl was on my birthday (rude!) and my husband wouldn’t let me watch Lifetime over the “big game.”
I mean I tried to be a nice wife but come on – football over Lifetime?
It’s my birthday I should have won. And I realize I sound like a whining brat and that’s ok.
I get 1 birthday a year and on that day I want what I want. All can go back to normal after it’s over.
I don’t think that’s asking for too much.

This year I lucked out and my birthday is the day before the Super Bowl.
So on Friday night, I’m going to dinner with Gina, her husband, and my husband.
It’s a seafood joint so I plan on eating my weight in the raw bar and basically eating all the oysters in the state of New York.
It’s going to be one hell of a night.
However, I wanted to make myself a cake to go with all that seafood I’m about to ingest.
This is just a simple yellow cake (that I would give you the recipe for but I can’t because it came from a box…stop judging me) topped with the most amazing frosting EVER. I’m not kidding.
This hands down is my favorite frosting ever.
It’s got a big bold chocolate flavor and is the type of frosting that chocolate lovers will LOVE!
The best part is that it’s super simple to make because it’s frosting. All you need is a mixer. How simple is that?
Well, you need a mixer and all the ingredients.
So maybe a little more complicated than just owning a mixer. But you had to have known you would have needed the ingredients so now I’m just rambling.

Make sure to use delicious chocolate for this frosting.
It’s all about the chocolate – am I right?
My personal favorite is the Ghirardelli bittersweet chocolate…soooooo good!
Then all you have to do is slather it on a cake and call it a day. Hello, birthday happiness!

Easy Whipped Chocolate Frosting

Ingredients
- 2 sticks, 1 cup unsalted butter, room temperature
- 2 tablespoons cold heavy whipping cream, more may be needed
- 1/2 cup melted bittersweet chocolate, cooled but still liquid
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon instant espresso powder
- 1/4 teaspoons kosher salt
- 2 cups powdered sugar, more may be needed
Instructions
- In a stand mixer add butter and heavy whipping cream. Beat for about 3 minutes until fluffy. At about the 1.5 minute mark scrape down the sides.
- Stir in melted chocolate, cocoa powder, instant espresso powder and kosher salt. Mix on low speed just to incorporate.
- Add in the powdered sugar 1 cup at a time, incorporating each cup slowly. (You’re doing this so that there is not a giant powdered sugar explosion when you go to speed up the mixer.)
- Slowly turn on the mixer and whip for about 5 minutes or until the frosting is light and fluffy.
- If the frosting is too thick add more heavy cream until desired consistency is met, if it’s too thin add more powdered sugar until desired consistency is met.

I personally think box cake AND brownie mixes are delicious…as long as you have a fabulous homemade frosting (canned frosting is disgusting in my opinion). This looks so yummy. Thanks and happy birthday! 🙂
