So apparently it’s going to be 70 degrees on Christmas eve. I can’t. I bought the most awesome cat sweatshirt for Christmas and now I’m pretty sure I will roast to death if I wear it. Does Mother Nature not care about my humorous cat sweatshirt plans?
In other news I saw the Star Wars movie. Don’t worry I won’t spoil anything. I’m not a movie monster. However I will say that I now can no longer be all “yeah, never saw Star Wars.” I mean I still haven’t seen the first 6 movies but now I’ve seen the 7th movie. At least I can say I accomplished something in 2015.
Other things I have accomplished in 2015:
– manipulated my husband into letting me get another cat (score!)
– formed an unhealthy relationship to my SodaStream (we are soulmates)
– finally watched Gilmore Girls (team Jess!)
– flew on an airplane (still hate it. still need Xanax #BranonXan)
Now, about this pudding. It tastes like the classic French hot chocolate in pudding form…hence the name. It has a deep chocolate flavor with just a hint of sweetness. If you want to add even more sweetness you can always top with powdered sugar or whipped cream. And because you want to really get the whole “French hot chocolate” experience make sure you eat this pudding warm. If you’re fancy put them in a glass. If you’re like me you will just eat it straight from the pot with a spoon. If you’re super duper like me you might find yourself spooning out a warm pudding bite and then directly spraying some whipped cream into your mouth to make the perfect warm pudding/whipped cream bite.
Oh and this recipe is ready in 20 minutes. SCORE!

French Hot Chocolate Pudding
This French hot chocolate pudding tastes just like Parisian hot chocolate but in pudding form. Deep chocolate flavor with just a touch of sweetness. If you're a chocolate lover this dessert is for you!
Yield: 2-4 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Ingredients:
- 2 cups light cream
- 2 tablespoons cornstarch
- 1/4 cup light brown sugar
- 8 ounces chopped bittersweet chocolate
- Sea salt
- Powder sugar, for topping
Directions:
In a medium sized saucepan add light cream and cornstarch. Stir together until combined and the cornstarch is not lumpy.
Add in sugar and chocolate. Cook over medium low heat while whisking to combine ingredients. Cook until the mixture is thick an resembles pudding in texture.
Remove from the heat and stir in a pinch of sea salt. Serve the mixture warm with a sprinkling of powdered sugar.

Ok maybe dumb question but what is considered light cream..I know what heavy whipping cream isbut have never seen anything in a store called Light Cream???

I made this last night, as a 1/1 batch. It was great! Too rich for 1/2 batch to be 2 servings, I think. Would the pudding taste ok cold as well?

I would be all over this! That is freaking amazing looking and I'd be crazy over this even though it is 70 freakin degrees here! haha.
