Salad and summertime just seem to go hand in hand. I know part of it is because it’s hot and eating sometimes feels like a massive chore. I’m not even kidding. If I had my way I would probably just eat popsicles all day errrryday in summer. I’m such a failure at adulting. However, I am always willing to eat a salad because everything is just so fresh in the summer. Seriously, I can head to the farmers market and have salad ingredients in 2.2 seconds.
This salad was born from my farmers market purchase because not only did my farm stand have fresh nectarines but they had cheese too! It was like a dream come true. This recipe is meat free BUT grilled chicken or shrimp would be a great protein choice.
Also, grilled fruit is where it’s at! I’ve been obsessed all summer long and grill just about any fruit I can get my hands on. Well, except bananas. That could be weird. BUT grilled nectarines are a 100% win. Make sure to get the grill really hot so when you throw on the sliced fruit it sears quickly so you get smokey grill marks but the fruit still says firm. You don’t want mealy fruit – no bueno.
Oh and that delicious dressing? It’s light and right for summer! I used my new Truvia favorite – Truvia Nectar. I know, I’m obsessed. I used it last month in my beet gazpacho and here I am using it again in this delicious dressing. It adds all the flavor of honey with 50% fewer calories than normal sugar.
So, bust out your grill and get to grilling some nectarines! They are not only a delicious snack but pretty amazing in this salad!

Grilled Nectarine Salad
This grilled nectarine salad combines two of my favorite summer things - salads and grilling! Sweet nectarines lightly grilled and tossed into a bed of arugula, ricotta salata and drizzled with a light honey balsamic dressing. You'll love how much flavor is packed into this beauty!

Prep Time: 15 minutes
Cook Time: 5 minutes
Total Time: 20 minutes
Ingredients:
For nectarines:
- 2 nectarines, 1 inch wide slices
- Olive oil
- Kosher salt and pepper, to taste
For salad:
- 4 cups baby arugula
- grilled nectarines
- 1/2 cup ricotta salata
For vinaigrette:
- 2 tablespoons balsamic vinegar
- 2 teaspoons Truvia Nectar
- 1 teaspoon dijon mustard
- 1/4 cup extra virgin olive oil
- Kosher salt and pepper, to taste
Directions:
For nectarines:
Lightly glaze each slice of nectarine with olive oil, season with kosher salt and pepper and grill quickly on a hot grill. Set aside.
For salad:
Add all ingredients to a large salad bowl, drizzle with desired amount of vinaigrette and toss to combine.
For vinaigrette:
Whisk together vinegar, Truvia nectar and dijon mustard. While whisking slowly drizzle in olive oil until combined. Season with kosher salt and pepper.

I've never tried grilled fruit! It's ridiculous. After seeing this, I'd really like to try. I was kind of hesitant before!
