You guys – I’m going to Vegas today and it’s literally going to be the temperature of the sun while I’m there. How anyone can live in a desert I’ll never know. I feel like my AC would be going so hardcore that it would blow out in one week because I need to live my life at a cool humidity free 65 degrees. I mean, I guess Vegas is a “dry heat” but really it still feels like you’re walking through an oven so I’m not sure it really matters.
BUT besides not being super thrilled about the heat I’m super excited to hang with friends, get a little sun, wear all my cute 90’s style dresses and have a cocktail. Or two. Or three. Or maybe four.
I would say maybe five but Vegas is expensive and I’m not rich enough to afford 5 Vegas priced drinks.
It’s also currently 1:20 am, I’m writing this post, I leave for the airport in 2.5 hours, I’m eating a box of Wheat Thins and watching some weird Lifetime movie about a woman who goes around with the nickname The Mistress Hunter. I have never felt like I was living the dream harder than this moment right here.
I mean, you know the movies Lifetime plays at 1 am are top of the line quality.
I should probably stop talking about Lifetime movies and the boiling heat of Vegas and get to talking about this healthy Greek yogurt curried chicken salad. Which of course I turned into a sandwich on toasted sourdough bread but it would also be great in a wrap, on a lettuce cup or plopped onto a big salad.
If you’re super anti-Greek yogurt (I mean, I don’t know anyone who is but I’m sure SOMEONE is) you can use mayonnaise in place. That will add some calories and fat but I’m pretty sure I don’t need to tell you that.
I also added in some raisins and dried apricots to add a little sweet bite to the chicken salad. I made sure to use no sugar added dried fruit and I picked up my Major Grey’s chutney in the international section at my grocery store.
If you’re sitting there going “what in the hell is Major Grey’s chutney?” Don’t worry. I got you covered. Basically, it’s a savory light curried condiment made from mango, onion, red bell pepper, apple, raisins, ginger, vinegar and brown sugar. It’s crazy good even if it does sound a little odd.
Trust me, ok?
OH WAIT! I totally forgot to tell all of you I was on live TV last weekend! Good news, I didn’t freeze, I didn’t say “fuck” which was my biggest fear and I ran out of time to wrap it up nicely but I only had 4 minutes and I have never been able to say all I need to say in 4 minutes.

Ok, back to the healthy Greek yogurt curried chicken salad. I happened to have some leftover chicken breast for this salad but I’m going to be straight up honest with you. I almost always use canned chicken when I make chicken salad. I really like the canned chicken breast in water from Trader Joe’s and keep it in my pantry at all times.
I’m all about that shortcut life.
Just remember that this salad has dairy so it’s not the best option for summer BBQ’s or long hikes. But let’s be honest – who wants to eat curry chicken salad while they’re hiking? All I ever want to eat is Clif bars, beef jerky and suck down an obscene amount of electrolyte water. Ok, the only reason I really like my electrolyte water is that it tastes like fruit punch. It’s totally worth the calories.
And I have a weird love affair with my other electrolyte water that tastes like lemon-lime. It reminds me of that Country Time lemonade that weirdly makes me feel like a kid.
Alright, this post is literally me rambling at 1:30 am but I feel like I have told you a lot of good information. I gave you this awesome salad recipe, I told you about me being on TV, I gave you really good recommendations for good quality electrolytes, taught you about Major Grey’s chutney, rambled about Lifetime and finally let you all know that I will melt while I’m in Vegas.

Healthy Greek Yogurt Curried Chicken Salad
This healthy Greek yogurt curried chicken salad is packed full of flavor and is the perfect meal for those days when you don't want to turn on the oven or cook over the stove. Prep Time: 10 minutes
Cook Time: 0 minutes
Total Time: 10 minutes
- 1 pound shredded chicken breast
- 2 green onions, thinly sliced, just the green part
- 1/2 cup fat-free Greek yogurt
- 1/4 cup raisins
- 1/4 cup diced dried apricots
- 2 tablespoons Major Grey's chutney
- 1 tablespoon curry powder
- 1 tablespoon minced shallots
- Kosher salt, to taste
- To serve: toasted bread or lettuce cups
In a large bowl add all ingredients and stir to combine.
Taste and season with kosher salt if desired. If you want more curry flavor you can add more curry powder.
To serve, add to toasted bread or serve in lettuce cups.
