Art is away in Austin this week – blergh. I know I’m about to sound like a stage five clinger but I’m not really meant to hang out by myself for 6 days straight. I’m 100% used to being alone during the day BUT not at night. At night I’m a hot mess. I keep all the lights on, all the doors locked and force myself to stay up past 10 pm because I get so bored I just go to bed early. Sooooooo tonight (instead of sleeping) I started Big Love. You guys – this honey mustard hummus chicken salad sandwich is legit delicious! I’m a HUGE fan of chicken salad and it’s one of my go to sandwich options. Seriously, during the summer I’m all about a chickens salad sandwich, pasta salad and a glass of rose. But, summer is over. I know – it’s sad. But it’s time for comfort food, pumpkin, and apples. That’s why with this chicken salad I get the best of the both worlds. My summer chicken salad craving mixed with a little fall deliciousness.

Instead of my usual onion and celery addition, I instead opted for crispy apples, dried cranberries and a little bit of minced rosemary. You guys – this is straight up fall chicken salad and I’m in love. PLUS it’s not just any old chicken salad made with may NOPE this baby is made with Sabra’s new line of refrigerated squeezable hummus spreads made for sandwiches! Honey Mustard Hummus Chicken Salad

This honey mustard hummus chicken salad is PACKED full of chicken breast, honey mustard hummus, apples, dried cranberries and minced rosemary. It's the perfect way to jazz up your everyday average chicken salad.

Total Time: 10 minutes

Ingredients:

  • 3 cups shredded chicken breast
  • 1/2 cup honey mustard hummus spread
  • 1/2 cup small diced green apple
  • 1/2 cup small diced red apple
  • 1/2 cup dried cranberries
  • 1 tablespoon minced rosemary
  • Kosher salt, to taste
  • Black pepper, to taste

Directions:

In a large bowl combine all ingredients and stir to combine. Add more hummus if you desire a creamier chicken salad.

Serve on bread if desired.

    Yum to this chicken salad! Also, I get what you mean about being home alone at night. I’m totally fine during the day, but once it’s dark- everything changes!

    I’m like that too when Thomas is gone. I hate it. I think I have separation anxiety from where he was deployed when he was in the Military. But anywho. Love the chicken salad! OMG and that Sabra spread is the bomb! I love it!

    I love me a good chicken salad sandwich, especially when it’s full of extra goodies like apples and cranberries and whatnot. I love the fact that you’ve used honey mustard hummus in lieu of the usual mayo… so much healthier, and way tastier too!
