I know I sound like a broken record but I’m a huge fan of soup during the summer. It’s such a nice treat for cool summer nights. I like to sit out on the patio, light a fire and enjoy that summertime vibe. Ok, maybe it’s not exactly like that. I don’t have a yard. Or a patio. Or a fire pit. So really I sit on my couch with the AC blasting and Judge Judy playing in the background while I stuff my face with soup. Sort of the same, right?

I guess the first one made a better mental picture but the second one is definitely true life. I’m all about keeping it real around here.

This soup takes your typical Italian flavors and gives them a big flavor boost by using Premio Hot Italian Sausage, fennel, white beans and lots of garlic and basil. It’s so cozy.

Yes, it’s still acceptable to be cozy in summer.

I actually never had Italian sausage until I moved to New York. I was so naive and young and pronounced Italian like EYE-talian and called soda, pop. Luckily my boss changed all of that quickly and introduced me to Italian food and the joy that is eating pasta and soup on a weekly basis.

Now, Premio makes both sweet and hot Italian sausage but I almost always reach for the hot because I LOVE spicy food. BUT you can totally use sweet (or a mix of both!) in this soup and it would still be tasty. PLUS if you’ve never had Premio I’m here to tell you it’s mighty tasty and it’s trans fat-free, gluten-free, no added MSG, no fillers, no artificial ingredients and no added preservatives. That means you’re getting straight up tasty sausage and nothing else!

If you’re not sold on the addition of fennel let me just tell you it’s totally necessary. I swear it doesn’t taste like licorice even though people like to say it does. Yes, it does have a slight anise flavor but it pairs so well with Italian sausage it’s a total soup game changer. My mother-in-law calls fennel “Italian celery” and I sorta wish I could campaign for that to be the official name because it’s cute and 100% accurate.

Italian Sausage Fennel White Bean Soup

This Italian sausage fennel white bean soup is the perfect cool night soup. Packed with hot Italian sausage, flavorful fennel, white beans and lots of fresh basil. You’ll love all the flavor you get packed in this easy to throw together soup.

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Ingredients:

  • 1 pound Premio Hot Italian sausage
  • 1 leek, trimmed, cut in half lengthwise and thinly sliced
  • 1 large shallot, minced
  • 1 fennel bulb, top and bottom trimmed, cut in half, thinly sliced
  • 4 cloves garlic, minced
  • Kosher salt, to taste
  • 6 cups chicken stock
  • 1 (15 ounce) can diced tomatoes
  • 2 (15 ounce) cans cannellini beans, drained and rinsed
  • 2 tablespoons basil pesto
  • Fresh minced basil
  • Fresh minced fennel fronds
  • Grated Parmesan, for topping

Directions:

Add a 5-quart soup pot to the stove over medium heat.

If your sausage came in casings, cut it out and add the ground sausage meat to the soup pot. Break up the sausage while it browns. Cook for about 5 minutes or until the majority of the sausage is starting to look brown.

Add in the leek, shallot, and fennel. Saute for another 10 minutes or just until the vegetables have started to soften.

Add in the garlic and cook for another minutes or just until the garlic is fragrant.

Pour in the chicken stock and diced tomatoes and stir to combine. Make sure to scrape the bottom of the pan if there was any browning.

Add the beans and let the soup simmer over low heat for about 10-15 minutes or until the soup smells fragrant and the vegetables seem soft.

Stir in the pesto to add a bit more flavor to the soup.

To serve spoon the soup into a bowl and top with a generous sprinkle of fresh basil, minced fennel fronds, and Parmesan cheese.

Note: Fennel fronds are the dill looking green leaves on the top of the fennel bulb.
