Roasted Garlic Chicken Pizza
This copycat roasted garlic chicken pizza reminds me of my favorite California Pizza Kitchen pizza. So full of garlic flavor and ready in just 30 minutes.Â
Are you in pizza overload? I feel like I have made a ton of new pizza recipes for the blog lately but I just can’t help it. I freaking love pizza. Plus it’s always so easy to make and ready in 30 minutes. How can you ever go wrong with a recipe like that? The answer is that you cannot. You cannot go with fast food.
Well, fast food made in your house. Not like McDonald’s fast food. That’s gross.
That’s a lie. I sorta love their nuggets with sweet and sour sauce. Don’t take my food blogger card away. I can’t help it I like them.
Now that it’s all out in the open I feel so much more free. Â
This pizza was inspired by the roasted garlic chicken pizza I used to get at The California Pizza Kitchen. Then they made a frozen version that was pretty kick ass too. However, I no longer live near a CPK and they no longer make the frozen pie so it’s up to me to make it from scratch. Which is probably better anyway because my homemade version tastes about 100% better.
True story.
This baby is packed full of roasted garlic, olive oil, chicken breast, mozzarella cheese and fresh oregano. It’s so tasty and will have you smelling like garlic for weeks to come. I wish I was kidding about that last part but I’m not. This pizza is crazy on the delicious flavor.

Roasted Garlic Chicken Pizza
This copycat roasted garlic chicken pizza reminds me of my favorite California Pizza Kitchen pizza. So full of garlic flavor and ready in just 30 minutes.
Yield: 1 large pizza
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Ingredients:
- 1 pound pizza dough
- 1 boneless skinless chicken breast, diced
- Kosher salt and pepper
- 2 tablespoons olive oil
- 10 cloves roasted garlic cloves
- 1-1/2 cup shredded mozzarella cheese, divided
- 1 teaspoon garlic powder
- 1 tablespoons chopped fresh oregano, divided
Directions:
Preheat oven to 425 degrees and prepare a baking sheet with a silpat liner.
Spread out dough onto the silpat and set aside.
In a small skillet set over medium high heat add a little drizzle of olive oil. Once the oil is hot add in diced chicken and season with a little kosher salt and pepper. Cook for about 3-4 minutes. It's ok for the chicken to still be pink in the middle you're just getting the outside a little browned.
In a small bowl mix together olive oil and roasted garlic cloves. Mix together until the garlic cloves are mashed and the mixture is somewhat smooth.
Add the mixture to the bottom of the dough and spread out over the dough.
Top with 1 cup shredded cheese, prepared chicken, sprinkle with garlic powder and 1/2 of the chopped oregano.
Top with remaining 1/2 cup shredded cheese.
Add to the oven and cook for about 15 minutes until the cheese is browned and the dough is fully cooked.
Remove from the oven, sprinkle with remaining oregano and serve hot.
This looks so good!! Delicious but quick and easy to make is the perfect combo! Can’t wait to try it!

What a fab pizza. Truly. I am a garlic person. I had to pin it.
So I was making pizza tonight. My usual: salami, cheese, peppers and onions. Now I have to defrost some chicken breast because I am definitely making this. I have never been to America so I have never heard of this California Pizza Kitchen but I just love the list of ingredients, especially the garlic in it. I will let you know how it was.

I made this pizza the other night and it was great, I absolutely loved it, my husband too. I roasted my own garlic and used 15 cloves for good measure, it was not too much. I also replaced half of the mozzarella with grated Gouda cheese, as I didn’t have enough mozzarella in the house. So, I don’t know how the original California Pizza tastes like, but this version was great, I will definitely make it again. Thank you for the recipe.

NEVER too much pizza. Ever. Especially this pizza. That looks amazing. And can I just out myself for being a LITTLE bit slow here? I never thought to cut a rectangle pizza like that to get triangle pizza slices!!! My rectangle pizzas always get cut into squares. Mind.Blown. I make pizza for the household occupants darn near every Friday night–never too many pizza posts for me, I’m glad to add them to my Friday Night Pizza Night board!
I used my stopwatch app to time myself from when I turned on the grill to preheat then walked into the kitchen and opened the fridge–within 29 minutes I had a grilled chicken potato and green bean pizza and a grilled zucchini and feta pizza ready to eat.

This recipe was delicious! I added a layer of loosely chopped spinach before the second layer of cheese to add some greens. I also added chopped tomatoes to the top when it came out of the oven. Also because I like a little kick, I added crushed red pepper. It was so good! I will definitely make this again. Thank you for the recipe!!
