Cast iron pizza is the BEST!

This isn’t just any old regular pizza—nope! It’s light on the red sauce, heavy on the cheese (three different kinds!), and topped with Italian sausage and steamed broccoli rabe.

SOOOO GOOD!

The bottom came out perfectly crisp and crunchy because I cooked it in my most treasured 12-inch cast iron skillet. It’s the perfect balance of textures.

Now, I usually use broccoli rabe in my Broccoli Rabe Pancetta Pasta, but I went ahead and tried it on pizza this time. Let me tell you something – I’m hooked!

I love how the slightly bitter greens pair perfectly with the tangy red sauce, salty cheese, and spiced Italian sausage.

It’s a match made in pizza heaven, and I’m here for it!

Ingredients for broccoli rabe pizza

  • Olive oil
  • Pizza dough
  • Garlic powder
  • Italian sausage
  • Broccoli rabe
  • Marinara sauce
  • Parmesan cheese
  • Romano cheese
  • Mozzarella cheese
  • Crushed red pepper

How to make

  1. Add olive oil to a 12-inch cast iron skillet and add room temperature dough.
  2. Spread the dough out and sprinkle with garlic powder.
  3. Brown sausage in a skillet, add broccoli rabe to the stem, and slightly soften.
  4. Add the marinara sauce to the dough, sprinkle with half the cheese, top with sausage and broccoli rabe, the remaining cheese, and top with crushed red pepper.
  5. Bake until the bottom of the dough is perfectly crispy and browned – about 15-20 minutes. I find 18 minutes to be the sweet spot in my oven.
  6. Let the pizza cool for 5 minutes in the pan, sprinkle with grated Parmesan cheese, remove it from the pan, and cut it into 8 slices.

My Pro Tips

Recipe Tips

  • Don’t skimp on the olive oil on the bottom of the pan. It helps your dough not stick to the cast iron skillet and turn perfectly crisp.
  • You can use whatever cheese blend you have on hand. This pizza is equally delicious when made with just shredded mozzarella.
  • Use mild, sweet, or spicy Italian sausage for this pizza.
  • Storebought or homemade dough works well here.

Ingredients 

  • ¼ cup olive oil
  • 1 pound pizza dough, room temperature
  • 1 teaspoon garlic powder
  • ½ pound Italian sausage, sweet or spicy
  • 5 pieces broccoli rabe
  • ¼ cup marinara sauce
  • ¼ cup shredded Parmesan cheese
  • ¼ cup shredded Romano cheese
  • 1 cup shredded Mozzarella cheese
  • ½ teaspoon crushed red pepper
  • 1 tablespoons grated Parmesan cheese

Instructions 

  • Add olive oil to a 12-inch cast iron skillet and place dough into the skillet. Using your fingertips spread the dough as close to the edge as possible. It will shrink slightly back but you should have no more than 1-inch space between the dough and the pan.
  • Sprinkle the dough with garlic powder and set aside.
  • Preheat your oven to 425 degrees F.
  • In a skillet set over medium heat add your sausage. Break up the sausage while it browns.
  • When the sausage is browned, add the broccoli rabe to the skillet, cover it, and let steam for a few minutes to help soften.
  • Start preparing your pizza by spreading out the marinara sauce, leaving about 1 inch from the edge of the dough sauce free.
  • Sprinkle with 2 tablespoons of shredded Parmesan cheese, Romano cheese, and 1/2 cup shredded mozzarella cheese.
  • Top with crumbled sausage and steamed broccoli rabe. Top with remaining cheese and crushed red pepper.
  • Add to the oven and bake for 15-20 minutes or until the crust is fully cooked and the top of the pizza is golden brown. You know the dough is cooked because the bottom of the pizza will be golden in color. You can check this by gently lifting up the pizza and checking the color.
  • Rest in the pan for 5 minutes, sprinkle with grated Parmesan cheese, remove from the skillet, slice, and enjoy.

Notes

  • You can use spicy, mild, or sweet Italian sausage. My favorite is spicy. 
  • This pizza makes 4 servings, with 2 slices per serving.
