I have a confession – I LOVE WHITE SWEET POTATOES! Don’t get me wrong, I like regular orange sweet potatoes too but white sweet potatoes are so freaking good. They aren’t as easy to find as “normal” sweet potatoes but when I do find them I go sweet potato crazy.
Don’t worry if you can’t find white sweet potatoes at your store. This recipe works perfectly with normal everyday sweet potatoes. I promise.
In fact, I almost shared it that way but couldn’t resist sharing my beloved white sweet potatoes instead.
I luckily have a big jar of honey sitting in my kitchen (harvested from my husband’s co-workers bees!) so I’m always looking for ways to use it up before it gets all crystalized. Not that it’s bad when it gets that way I just like to think of it as some sort of weird cooking goal.
And since nothing is not delicious when you cover it in pumpkin pie spice I used that as well.
Of course, cinnamon can be used in place. I just like the little hint of nutmeg, ginger, and cloves you find in the mix.

There was sadly a time in my life that I remember HATING sweet potatoes. I thought they were super gross and I hated that they were always covered in either brown sugar or marshmallows.
Spoiler alert – not all sweet potatoes need to be eaten this way. Even though this is a sweeter preparation it’s not sickeningly sweet like so many other sweet potatoes recipes.

I added a little fresh thyme to these roasted white sweet potatoes but you could also try adding minced sage. It’s the perfect fall flavor and goes perfectly with honey and cinnamon.
Plus, if you’re like me you always have WAY TOO MANY fresh herbs that need to be used.
Seriously, so many herbs.
These are also a fantastic addition to your holiday table. They are the perfect twist to the normal sweet potato dishes you might find at your family’s table. Plus, because they are made with white sweet potatoes everyone will be all “Wait. Sweet potatoes come in white?”

- 4 white sweet potatoes, scrubbed clean and cubed
- 1/4 cup honey
- 1/4 cup olive oil
- 2 teaspoons fresh thyme leaves
- 2 teaspoons pumpkin pie spice
- Kosher salt, to taste
- Black pepper, to taste
- Preheat oven to 350 degrees and line a rimmed baking sheet with parchment paper or a Silpat liner, set aside.
- In a large bowl add cubed sweet potatoes and add in honey, olive oil, fresh thyme leaves, pumpkin pie spice, kosher salt, and black pepper.
- Stir to combine.
- Add to your prepared rimming baking sheet and roast for 25-30 minutes.
- Every 10 minutes stir the potatoes so they don't burn. Careful while turning the potatoes that you do not break them.
- Serve hot.
