If there is one thing I love in the summer it’s no bake dessert. I mostly love it because it’s easy but I really love it because it means I don’t have to heat up the house for hours. When it’s 100 degrees outside the thought of heating up the house almost makes me want to scream. Plus I like to keep a nicely chilled house so ovens don’t go with that mix.

I’m such a baby when it comes to the heat I cannot stand to be warm. In a perfect world my house would be chilled to exactly 62 degrees.

Deep down inside I think I’m basically a popsicle in a human body.

Besides being obsessed with being a popsicle I’m now also obsessed with Snapchat. I feel like a 12 year old because what grown adult is obsessed with Snapchat?

Ok, enough about Snapchat and me secretly wanting to live my life of a popsicle. Lets talk about these no bake cheesecake bites. They are flavored with toasted coconut and lime which reminds me of paradise and who doesn’t love paradise? Plus I used my most favorite crispy Athens phyllo cup shells. They are the perfect shell to hold the cheesecake filling and keep a perfect crunch with each and every bite.

I’m such a sucker for a crunchy shell.

Just remember this weekend is Fourth of July soooooo you should probably make this because it’s pretty amazing and totally perfect for parties. Who doesn’t love coconut, lime, cheesecake and phyllo crunch?

No Bake Coconut Lime Cheesecake Bites

These no bake coconut lime cheesecake bites are the perfect party food. Super simple to make and ready in under 30 minutes. Say hello to dessert!

Ingredients:

  • 2 boxes (30 cups in total) Athens mini fillo shells
  • 8 ounces cream cheese
  • 4 ounces vanilla bean creme fraiche
  • 1/4 cup powdered sugar
  • 1/2 cup toasted shredded sweetened coconut
  • 1 lime zested

Directions:

Preheat oven to 350 degrees.

Place phyllo shells on a baking sheet and bake for 5 minutes until lightly browned. Take out of the oven and let cool.

In the bowl of an electric mixer add cream cheese, creme fraiche and powdered sugar. Blend on medium speed until smooth and combined.

Add in toasted coconut and lime zest and mix until combined.

Fill each phyllo cup with about 1 tablespoon (or more) cheesecake mixture and top each bite with more toasted coconut if desired.

These are delicious, but I can’t find crème fraiche, so I used some yogurt mixed with a bit of sour cream. Next time I may try some mascarpone, as I have that. Also, we really like lime, so I’ll add a bit of lime juice too. I got rave reviews when I took these as my snack to share at a Trivia contest and they’ve been requested for a party this week. 😋

No bake desserts are a MUST for the summer! Im all about NOT turning my oven on or at least not turning it on a ton! Oh my gosh and yes to snpchat! haha I tried so long to not deal with it but now I love it! I just got on there to add you and I saw where you added me so I added you back haha <3
