I know I have talked about how I’m a huge fan of Neilson-Massey vanilla and recently while shopping I picked up another bottle of their vanilla extract and a bottle of their vanilla bean paste. If you have never heard of vanilla bean paste it’s pure vanilla with vanilla beans all in a paste form. Love the stuff! If you get the opportunity to pick up a bottle I highly recommend it. Now, since I had a couple apples laying around I decided I would turn them into something sweet and delicious. I originally set out to make cinnamon apples but when I saw the bottle of vanilla bean paste I changed my mind. Vanilla trumps cinnamon in my book ![]()
I also made some French toast and served the apples over top. I thought it was perfect. Since the apples make a thick vanilla syrup it took the place of traditional maple syrup. If you are a not a fan of fruit on your French toast you could always serve it along the side.

Vanilla Spiced Apples:
3 apples – peeled, cored and sliced into wedges (8 slices per apple)
3 tablespoons unsalted butter
1/2 cup dark brown sugar
1 tablespoon vanilla bean paste
1 pinch of salt
1 1/2 cup cold water mixed with 1 tablespoon cornstarch (mix till combined and no clumps)
Peel, core and slice apples. Add butter to a large skillet and melt over medium heat. Once melted add apple slices and cook for 5 minutes to soften apples. Add brown sugar, vanilla bean paste and salt. Stir together and then add water/cornstarch mixture. Continue to cook over medium heat until apples are soft. Around 15 –20 minutes. When apples are soft you can turn up the heat to quickly thicken syrup. The apples and syrup will be ready once it reaches maple syrup consistency.

The Neilson-Massey vanilla bean paste is seriously amazing…I bet it was wonderful with the apples! And I love the idea of serving the apples on French toast!
