Okay, I know it’s officially fall now, but I’m still spying some end-of-summer produce on my shelves and I’m jumping for joy. As much as – I love fall, I LOVE summer produce just a little bit more. I especially love when it’s fig season. Figs are such a wonderful little treat that as soon as I see them in the store, I’m all over them! My grandmother had a fig tree in Georgia, and if I was visiting during fig season, they were all mine! Well, okay, that’s a lie. I was forced to share. BUT I wanted them all!

So, naturally, since it’s fig season, I went ahead and did something magical with them. I put them on pizza! BUT not just any pizza – NOPE! I put it on a deliciously simple pizza made with a garlic olive oil base, mozzarella cheese, pancetta, caramelized onions sautéed in Land O Lakes® Butter, goat cheese and arugula. WHOA! I devoured this pie in almost no time because there is no delaying when it comes to eating pizza fresh out of the oven.

You know what else pizza is good for? Spreading the love! My neighbors just recently had an adorable little baby and sometimes new parents need some good in their lives. Sooooo, that means I sometimes surprise them with dinner because I’m always making too much food and because it’s hard cooking with a new baby. Who wants to worry about dinner when there are babies to be fed and snuggled? Am I right?

Recipes that work great for new moms can be anything from a casserole to fresh pizza. Plus, fresh pizza is almost always guaranteed to be better than take-out. Trust me, if you showed up to your neighbors’ house with fresh, hot fig pizza they would not turn you away!

Fig Caramelized Onion Pizza

Yield: 1 large pizza

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Ingredients:

  • 1 pound pizza dough, room temperature
  • 3 tablespoons Land O'Lakes unsalted butter, divided
  • 1 sweet onion, peel removed and thinly sliced
  • 1 tablespoon balsamic vinegar
  • 4 ounces pancetta, small diced
  • 1 teaspoon garlic powder
  • 1 cup mozzarella cheese
  • 5 figs, each sliced into 3 pieces
  • 4 ounces plain goat cheese, crumbled
  • 1 hand full arugula
  • Fresh cracked black pepper

Directions:

Preheat oven to 425 degrees and prepare a baking sheet with a non-stick liner.

Spread out dough onto the liner and set aside.

In a medium-sized skillet set over medium heat add 2 tablespoons olive oil. Once the oil is hot add in the onions and cook until they are soft. Add the balsamic vinegar and cook for a few more minutes. Remove the onions from the pan and set aside.

In the same pan add the diced pancetta and cook just for a few minutes to help cook off some of the fat.

On your stretched out dough use remaining tablespoon of olive oil to spread across the dough. Sprinkle with garlic powder.

Top with ¾ cup mozzarella cheese and then top with desired amount of caramelized onions, pancetta, figs, remaining mozzarella cheese and crumbled goat cheese.

Add to the oven and bake for 15-20 minutes or until the crust is brown and the cheese is melted on the top.

Remove from the oven and top with arugula and fresh cracked pepper, if desired.
