This BBQ chicken pizza comes together fast with store-bought pizza dough and a rotisserie chicken, layered with sweet and smoky BBQ sauce, crunchy and spicy red onions, melty mozzarella, and fresh cilantro. 

Since we’re taking help from the store, there’s no need to fret over rising and kneading homemade dough.

Just buy it, roll it out, and you’re on your way to a delicious dinner!

Ingredients for BBQ Chicken Pizza

  • Pizza dough – Premade pizza dough is such a time saver! You can find it in the refrigerated section of most major grocery stores.
  • BBQ sauce – This will be the sauce on our pizza. Feel free to use your favorite homemade or store-bought variety.
  • Chicken – Use some help from the store by buying a rotisserie chicken because this helps the pizza come together quickly!
  • Mozzarella cheese – The perfect melty cheese for pizza.
  • Red onion – Red onion will give a savory, and sharp flavor.
  • Cilantro – Cilantro will add a burst of herbaceous freshness.

Using store-bought dough

You can find pre-made pizza dough in either the freezer or the refrigerated sections of most major grocery stores. 

If you’re unable to find it there, you can go down to your favorite pizza place and buy a pre-made ball of pizza dough from them!

And yep, you guessed it: you can freeze raw pizza dough for later use. Wrap the ball tightly with plastic wrap, and put the ball in a freezer-safe storage bag.

When you’re ready to use, simply thaw the dough in the refrigerator.

Cheeses

I’ve opted to use classic mozzarella cheese for this BBQ chicken pizza, but here are some other great options as well:

  • Smoked mozzarella
  • Smoked provolone
  • Cheddar blend

Gluten-free

This recipe can be adapted to fit your lifestyle, whether that’s gluten-free, sugar-free, or vegan.

Just switch out the necessary ingredients to fit what you need (chicken substitute for vegan pizza, gluten-free crust for GF-friendly pizza, sugar substitute BBQ sauce for sugar-free, etc).

Don’t be afraid to play around with the ingredients to fit what you love most!

Storage and leftovers

Any leftover BBQ chicken pizza can be stored in an airtight container in the refrigerator for up to 2 days.

To reheat pizza, I like to place a cold slice on a nonstick pan set over medium-low heat and cover it with a lid. 

Heat for about 3-5 minutes and the pizza will be crusty on the bottom, and the cheese will be melty on the top from the trapped heat!

BBQ Chicken Pizza

Ingredients 

  • 1 pound raw pizza dough
  • 1/3 cup bbq sauce
  • 1-1/2 cup shredded mozzarella cheese
  • 2 cups shredded cooked chicken
  • 1/4 thinly sliced red onion
  • 1/4 cup sliced jalapenos, fresh or pickled
  • 1/4 cup finely chopped cilantro

Instructions 

  • Preheat the oven to 425 degrees F and prepare a baking sheet with a Silpat liner or parchment paper.
  • Spread out dough onto the Silpat and set aside.
  • Spread the bbq sauce over the dough leaving a 1-inch from the edge clear of bbq sauce.
  • Top with 1 cup shredded cheese, chicken, sliced red onion, and jalapenos.
  • Top with the remaining 1/2 cup of cheese.
  • Add to the oven and bake for 15-20 minutes or until the crust is brown and the cheese is melted on top.
  • Once fully cooked sprinkle with chopped cilantro and extra bbq sauce if desired.
