It’s that beautiful time of the year – cocktail time! It’s also the time of the year where you wake up, put on capri pants and go to walk out the house and it’s snowing. SNOWING!  You guys, NO! NO! I completely refuse to believe that winter is actually here. I literally opened the door and whispered to myself “winter is coming.” Then I shut the door and put on real shoes because I simply cannot wear flip flops in the snow. Which is a real bummer because I totally would except it would result in frozen little toes and that sounds 100% not fun.

You know what else winter brings? The craving for 100% comfort food. You know what is 100% comfort to me? Mac and cheese! The real issues I have with mac and cheese is that I make a tray and pretty much want to eat the whole thing by myself. I literally scoop it into a bowl and eat till I’m about to burst. Oh, and I’m so stuffed after my mac and cheese I eat zero vegetables. Yeah, no bueno.

However, I teamed up with EatingWell™ frozen entrées so I can have my comfort food AND my veggies all packed into one delicious frozen meal. AND they taste awesome and that is pretty hard to find in the frozen meal game.

PLUS each frozen meal contains 1 cup of vegetables so you won’t be guilty of that whole “just eat the main course and forget about the vegetables” thing. They are also free of preservatives and artificial flavors! Ohhhhhh and they offer up 8 different options – cherry port pork, chicken & wild rice stroganoff, creamy pesto chicken, Indian inspired chicken, Korean-inspired beef, Moroccan inspired chicken, spicy Asian-inspired chicken and my personal favorite Vermont cheddar mac & cheese! These meals are delicious, easy to make and perfect for your “OMG I NEED FOOD AND I CAN’T THINK ABOUT WHAT TO COOK” moods. Seriously, look at that mac and cheese! It was actually cheesy and full of sharp cheddar flavor and the broccoli cooked up bright and still with a bit of crunch to it. So good!

Now, to serve along with this cheesy and delicious mac and cheese I went full on fall and full on Vermont. I paired apple cider with pumpkin beer and went for it. If you’re a fan of shandy you usually think of a light beer mixed with lemonade but in this case, I went pumpkin beer mixed with fresh sweet pressed cider. You could also pair it with sparkling cider if you’re looking for full-on bubbles.

I am definitely not ready for snow yet, but am so excited to imbibe in any cocktail that involves pumpkin beer (my seasonal favorite!)

Giiirrrrl…the pumpkin & cider combo calling my name. Because bubbles. I really like Eating Well magazine, so I’m intrigued that they have a line of frozen dinners. I probably would never have tried them without your endorsement because let’s be honest-frozen dinners usually taste like cardboard they come in.
