I got a phone call from my old boss yesterday and she asked me to tag along for 12 days to help her out with some work stuff. Of course, I said yes because (1) I love money (2) my old boss is really nice and (3) it involves me getting to visit London for a few days. You guys, I love London so much I’m just about BUSTING with excitement.  I went to London last summer with Art and I think we have both decided it’s the type of town we both dig and plan on visiting again. It’s a bummer Art can’t come out and meet me there but we have a trip planned to Mexico 3 days after I get home from London. My sleep cycle is going to be all kinds of off.

I guess it’s a good thing I have a lifetime supply of Benadryl to help me sleep. <— I know Gina is totally rolling her eyes at me right now and calling me crazy for loving my Benadryl induced sleep. I’m not addicted guys – I promise. I just need a little help now and again #dontjudgeme #mydoctorsaiditwasok

So the downside of going away for 12 days and then being home for 3 and then going away again for another 7 days is that I have a lot of work to do well in advance. This, of course, causes me to mildly freak out BUT I’m really trying to get my act together and work hard and fast for the next few weeks. So, naturally, that means I had nothing to post today (because before yesterday I thought I had tons of time to just work ahead while I was away in Mexico) so I picked something out of my reserves.

My reserves are where I keep a hodgepodge of recipes that I shoot randomly and then wait to post for days when I’ve been sick, lazy, traveling, watching too much Lifetime movie channel, etc. You get the drift.

Anyway, I made this fluffy toasted coconut vanilla bean frosting exactly one year ago and decided it was time to share this frosting before I decided that I didn’t like the photography any longer. I also wanted to share it because OMGHEEEEE this fluffy toasted coconut vanilla bean frosting is legit!

This fluffy toasted coconut vanilla bean frosting is the perfect frosting for brownies, cakes or even cupcakes. It turns out super fluffy and it's packed full of toasted coconut.

It’s super fluffy and flavored with my favorite vanilla bean paste and TONS of toasted coconut. I threw this frosting on top of brownies BUT it also works well on cake. It also really really really tastes great eating it straight from the bowl. You should know this just in case that is your type of thing.

Fluffy Toasted Coconut Vanilla Bean Frosting

This fluffy toasted coconut vanilla bean frosting is the perfect frosting for brownies, cakes or even cupcakes. It turns out super fluffy and it's packed full of toasted coconut.

Yield: about 3 cups

Prep Time: 10 minutes

Cook Time: 0 minutes

Total Time: 10 minutes

Ingredients:

  • 3/4 cup unsalted butter
  • 1-1/2 cups powdered sugar
  • 2 tablespoons coconut milk
  • 2 teaspoons vanilla bean paste
  • 1 cup toasted coconut

Directions:

Add butter to the bowl of an electric mixer and mix on high speed for 5 minutes - or until the butter is light and fluffy.

Add in powdered sugar, coconut milk, and vanilla bean paste. Mix for another 5 minutes. At this point, the mixture should be very fluffy looking.

Stir in the toasted coconut and use it for topping brownies, cakes or cupcakes.

Note: If you're not sure how to make toasted coconut all you have to do is preheat your oven to 325 degrees, add 1 cup sweetened shredded coconut to a sheet pan and toast in the oven for 5-10 minutes. Toss the coconut a few times while it bakes until it's golden brown. Keep at eye on the coconut in the oven as it can burn quickly.

I have never tried coconut milk in frosting. But I love toasted coconut so I bet this is amazing!

Frosting out of the bowl...sounds just about perfect to me! I have a bunch of those recipes hanging out on my computer too. But I'm not very efficient in getting them up on the blog! Happy travels!
