Especially a potato salad that is packed full of herb flavor with tiny bits of crispy bacon and flavorful red onion – YES PLEASE!

Well, let me introduce you to your new favorite potato salad – herbed Dijon mustard potato salad!

This salad is made with creamy red potatoes, herbed olive oil dressing, crispy bacon, and a touch of red onion to really round out the flavor.

Plus, because this potato salad is made without mayonnaise it’s perfect for summer BBQs or outdoor parties.

Ingredients for herbed Dijon mustard potato salad

  • Baby red potatoes – Red potatoes are the perfect waxy potato for this potato salad.
  • Thick sliced bacon – I love the addition of salty crunchy bacon.
  • Red onion – If you don’t have any red onions on hand you can use shallots for a lighter flavor.
  • Mixed fresh herbs – I used a mix of parsley, chives, tarragon, and dill.
  • Garlic – Just a touch for added flavor and punch.
  • Olive oil – Use a good olive oil as this potato is mayo-free.
  • Whole grain Dijon mustard – This brings acid and a big zing of flavor.
  • Red wine vinegar – Vinegar also brings in acid and zippy flavor.
  • Kosher salt and pepper – Season and add more if desired.

I think red potatoes are one of the best type of potatoes for homemade potato salad. There are few reasons why but here are my top resons:

  1. Texture: Red potatoes have a waxy texture, which means they hold their shape well when cooked. This is essential for potato salad because you want the potatoes to stay intact and not become mushy or fall apart when mixed with other ingredients and dressing. The firm texture of red potatoes gives the salad a pleasant bite.
  2. Flavor: They have a mild, slightly sweet flavor that pairs well with a variety of seasonings and dressings. Their natural taste doesn’t overpower the other ingredients in the salad, allowing the flavors of herbs, spices, and the dressing to shine through.
  3. Thin Skin: Their skin is thin and edible. This eliminates the need for peeling, making the preparation of potato salad more convenient and time-saving. The skin also adds extra nutrients and fiber to the dish.
  4. Moisture Content: Red potatoes have a slightly higher moisture content compared to some other potato varieties. This moisture helps keep the salad from becoming too dry, ensuring it stays creamy and enjoyable.

If you can’t find red potatoes you can try antoher waxy potato like a Yukon gold.

Using different herbs

This is a really versitile recipe so you can idealy use whatever herbs you have on hand. I think the addition of fresh thyme, basil, or even oregano would be delicious.

Just remember, this salad relys heavily on the herb flavor so make sure to use herbs you love the most.

Ingredients

  • 2 pounds baby red fingerling potatoes halved or quartered if really large
  • 6 thick slices bacon
  • 1/2 cup small diced red onion
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1/4 cup parsley
  • 2 tablespoons minced fresh chives
  • 2 tablespoons minced fresh tarragon
  • 2 tablespoons minced fresh dill
  • 2 tablespoons red wine vinegar
  • 1 tablespoon whole grain Dijon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  • Add potatoes to a medium-sized pot and cover with cold water.
  • Add to the stove, bring to a boil, and cook until soft, about 10 minutes.
  • Remove from the stove, drain, and let cool.
  • While the potatoes are cooking add the bacon to a skillet and cook until crispy. Once the bacon is fully cooked chop up the bacon and set aside.
  • In a large bowl add cooled potatoes, chopped bacon, and red onion, set aside.
  • In a blender or food processor add garlic, olive oil, parsley, chives, tarragon, dill, red wine vinegar, whole grain Dijon mustard, kosher salt, and black pepper.
  • Process until smooth.
  • Pour the herb mixture over the potatoes and stir to combine.
  • Taste and if desired, season with more kosher salt.

I can't eat mayo so this is perfect for me. I'm a huge potato salad fan but can rarely partake at parties because so many people use mayo. I'm passing this to all my pals who offer to make potato salad for all our summer gatherings. Ha. I love that you added bacon. I mean, the more bacon the better.
