These chocolate covered strawberry waffles combine fresh berries tucked inside a fluffy buttermilk waffle and then drizzled with melted chocolate. The perfect breakfast or dessert!

If you’re a big fan of the combination of strawberries and chocolate, these chocolate covered strawberry waffles are just what you need! They are deliciously fluffy buttermilk waffles combined with chopped strawberries and semi-sweet chocolate chips. What’s not to love about this?
Now, these are perfect for Valentine’s Day but, truthfully, great for any day of the week you want a little splurge. They also make a fabulous dessert.
You don’t have to cover them with a whole chocolate covered strawberry, but it’s highly recommended!
I used melted chocolate, sliced berries, and powdered sugar as toppings, but honestly, you can use whatever you like the most.

Chocolate Covered Strawberry Waffles

For waffles:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 2 large eggs
- 2 cups buttermilk
- 1/4 cup unsalted butter, melted
- 2 teaspoons vanilla bean paste
- 1 cup small diced strawberries
- 1/2 cup bittersweet chocolate chips
For topping:
- 1 cup sliced strawberries
- ½ cup melted chocolate
- 2 tablespoons powdered sugar
Instructions
- Preheat waffle maker according to directions.
- In a large bowl add flour, baking powder, and kosher salt. Whisk to combine and set aside.
- In a smaller bowl whisk the eggs lightly and whisk in buttermilk, melted butter, and vanilla bean paste.
- Pour buttermilk mixture into the flour mixture and stir to combine. Once fully combined stir in strawberries and chocolate chips.
- Add waffle mix to your waffle maker and cook according to manufactures instructions.
- Before serving top with sliced strawberries, melted chocolate and powdered sugar.
