You know those people who could live off snacking but eat no real meal? Yeah, that’s me. If it’s crunchy, I want it. If it’s sweet, I want it. I once heard that if you snack too much at night you should learn how to knit or crochet because really you’re just bored and need something to do with your hands. I tried crocheting and it was a disaster. It’s easy enough to comprehend but my ability to read a pattern is on par with a newborn baby attempting to read.

Needless to say, I’m not Martha Stewart.

I was asked to make a heart healthy snack so went to the sweet potato chip route. I love flavored crunchy chips but didn’t feel like frying or spending too much time in the kitchen. So I threw together a smokey chipotle BBQ style spice mix and got to slicing. All you do is lightly coat in oil, add to the microwave and wait patiently for them to be ready. I should probably note that these chips are pretty spicy but you could lessen the heat by using less chipotle chile powder and a little more chili powder.

Microwave Chipotle Sweet Potato Chips

These microwave chipotle sweet potato chips are ready in no time and cook crispy in the microwave. Dust with a homemade chipotle spice blend and enjoy!

Yield: 2 cups chips

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Ingredients:

  • 1 medium sized sweet potato
  • 1 tablespoon olive oil
  • 3/4 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon garlic salt
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon chipotle chile powder (sometimes called chipotle chile pepper)

Directions:

Scrub your sweet potato and cut off ends.

Using a mandoline cut the sweet potato into thin slices.

Add slices to a large bowl and drizzle with oil and kosher salt. Using your hands toss the slices to evenly coat with oil and salt.

Add a piece of parchment paper to the tray in your microwave.

Add sweet potatoes to the parchment paper keeping them close to each other but not overlapping.

Cook in the microwave on high heat anywhere from 3.5 minutes to 5 minutes. This will completely depend on the strength of your microwave and the size of your sweet potato slices. Please keep an eye on your chips until you learn the timing of your potatoes.

While your potatoes are cooking mix together paprika, garlic salt, chili powder and chipotle chili powder in a small mixing bowl.

Once the chips are done cooking remove from the microwave and toss in the spice mix.

Remove chips from mix, add to bowl and continue until all chips have been cooked.

Let the chips cool slightly and enjoy.

Note: The chips will sometimes turn a little brown in the middle while cooking, they still taste fine and are not burnt. Also, the chips should be mostly crunchy when done cooking but will crisp up a little more once allowed to set for a minute after being cooked. These chips are best enjoyed right away. If they sit for too long they may soften.

  2. Oh yesss! Snack tonight!!!! What set thickness do you use on your mandolin? Like the medium slice or the thinnest?

    1. I have to admit, I use a really old mandolin my grandmother gave me. So I’m not sure if it’s on par with modern mandolins BUT I use the smallest setting. The chips are thin but not paper thin. If you look at the first picture you can see they do have a little edge to them.

  5. I am not a snacker. I don’t have a mandolin, but I keep reading recipes that are fun and delicious which require one. I better get one. I love chips and French fries. I don’t allow myself to have them often. This is PERFECT. Plus it spices up my life—-Ha—-which knitting doesn’t do. Albeit I like to knit
    and crochet, but despite doing it on and off thru the years I have never progressed much beyond mufflers.
