Are you looking for the perfect savory waffle breakfast? Or maybe an excellent addition to your breakfast-for-dinner routine? This cornmeal waffle is packed with sausage, cheese, sriracha, maple syrup, and spices.
I’m used to eating sweet waffles, but sometimes switching things and going savory is nice!
For the waffle, I mixed all-purpose flour and cornmeal for the base and then threw in the usual suspects: leavening ingredients, chopped-up cooked breakfast sausage, shredded cheese, and some flavor spices like smoked paprika and chipotle chile powder.
It’s a real Tex-Mex approach to breakfast. Sort of like my Huevos Rancheros, Chorizo Cotija Guacamole Toast, Chorizo Breakfast Hash, or Huevos Motuleños. Are you looking for a throw-together and bake option? Try this Mexican breakfast casserole!
I used pre-cooked sausage patties that I chopped up for the sausage bits. But you can use whatever you have on hand as long as it’s cooked. Leftover breakfast roll sausage would work well here.

Ingredients for cornmeal waffles
- All-purpose flour
- Cornmeal
- Baking soda
- Baking powder
- Spices
- Buttermilk
- Maple syrup
- Olive oil
- Sriracha
- Pre-cooked sausage patties

How to make
The best part about making waffles is being able to bust out my waffle maker! I don’t use it a lot but every single time I do I think to myself “why in the heck don’t I use this more?”
Well, if you’re tired of thinking of the same just go ahead and make this recipe. It will have you using your waffle maker every single day!
- In a bowl whisk together your dry ingredients.
- In another bowl, whisk together your wet ingredients.
- Mix the wet into the dry and fold in both the chopped sausage and shredded cheese.
- Add your waffle mix to the preheated waffle maker, cook until browned and crispy.
- Top with a fried egg (if desired) and drizzle with sriracha and a sprinkle of cilantro.

Substitutions and Adaptations
- Protien options: Switch up the cooked sausage patties by using any other pre-cooked breakfast meat such as chopped ham, bacon, chorizo, or chicken sasuage.
- Veggies: Add some extra nutrition by adding chopped and sauteed peppers or onions.
- Cilantro: Chopped cilantro in the batter of the waffles will bring some fresh flavor.
- Vegan: Keep it vegan by using meat free sausage crumbles and vegan cheese. Keep the fried out of the mix too.
Storage options
You can freeze these waffles by wrapping them in plastic wrap and storing in a freezer safe zip-top bag. To reheat, just remove from the oven and warm in a 350 degree F oven,
For basic storage you can store them in an airtight container in the refrigerator for up to 3 days.

Cheddar Sausage Cornmeal Waffles

Equipment
Ingredients
- 1 cup all-purpose flour
- 1 cup cornmeal
- 2 teaspoons baking soda
- 1 teaspoon smoked paprika
- 1/2 teaspoon baking powder
- 1/4 teaspoon chipotle chile powder
- 2 cups buttermilk
- ¼ cup maple syrup
- 2 tablespoons olive oil
- 2 teaspoons sriracha
- 4 precooked pork sausage patties, defrosted and cut into small pieces
- 1/2 cup shredded Mexican blend cheese
- 4 large eggs, fried
Instructions
- Preheat waffle iron.
- In a large mixing bowl whisk together flour, cornmeal, baking soda, smoked paprika, baking powder and chipotle chile powder.
- In another bowl whisk together buttermilk, maple syrup, olive oil and sriracha.
- Pour the buttermilk mixture into the flour mixture and stir to combine.
- Fold in diced sausage and shredded cheese.
- Spray your waffle iron with nonstick spray and cook waffles according to waffle iron directions.
- Top warm waffles with fried eggs and a drizzle of sriracha.
