This breakfast is all that and a bag of chips. Or in this case – all that and a chocolate covered strawberry. I’m such a waffle freak that I would happily eat them every single day if I could. I say “could” because I do not need to be eating waffles topped with deliciousness like this every day.

However, if it were say Valentine’s Day these waffles might be perfect. And since that little romantic bundle of joy holiday is coming up I think you should plan to add these to the menu. If you surprised your loved one with these waffles in bed they would love you FOREVER! Oh and don’t worry I kept the waffle just lightly sweetened by adding just a touch of Truvia Brown Sugar Blend. It gives you all that flavor of brown sugar but with 75% fewer calories.

To be honest we never eat in bed. My husband is a freak about crumbs and will not allow any eating in the bedroom. Not that I’m in a big habit of eating while I’m in bed BUT I do think the whole “breakfast in bed” thing is sorta sweet. Although I guess now that I think about it the whole crumbs thing would sorta bother me. I think if we did have breakfast in bed I would probably have to strip the bed afterwords for fear of finding a crumb in the bed at bedtime.

Ok I seriously have spent WAY too much time analyzing if crumbs would end up in my bed and how much it would bother me.

Back to waffles – these babies are packed full of sweet diced strawberries, vanilla bean paste, bittersweet chocolate chips and come out super fluffy and totally delicious. For the topping I cut up a bunch of strawberries and then drizzled the whole stack with MORE melted chocolate. It’s sweet, delicious and totally perfect in every single way.

Chocolate Covered Strawberry Buttermilk Waffles

These chocolate covered strawberry buttermilk waffles are the best breakfast you will ever have! Fresh berries tucked inside a fluffy buttermilk waffle and then drizzled with melted chocolate. How can you not love that?

Yield: 4-5 large waffles

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 2 cups all-purpose flour
  • 3 teaspoons Truvia brown sugar blend
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 cups buttermilk
  • 1/3 cup melted coconut oil
  • 2 large eggs
  • 2 teaspoons vanilla bean paste
  • 1 cup small diced strawberries
  • 1/2 cup bittersweet chocolate chips
  • Sliced strawberries, for topping
  • Melted chocolate, for topping
  • Powdered sugar, for topping

Directions:

Preheat waffle maker.

In a large bowl add flour, Truvia brown sugar blend, baking powder, baking soda and kosher salt. Whisk to combine and set aside.

In a smaller bowl whisk together buttermilk, melted coconut milk, eggs and vanilla bean paste. Whisk to combine.

Pour buttermilk mixture into the flour mixture and stir to combine. Once fully combined stir in strawberries and chocolate chips.

Add waffle mix to your waffle maker and cook according to manufactures instructions.

Before serving top with sliced strawberries, melted chocolate and powdered sugar.

I've never made waffles but I so wish I had a waffle iron right now. These look incredible! And I love that you used Truvia for a less sugary version. Oh and our kitchen table is always full of baking ingredients so we eat in bed quite often. Haha. My husband would hate me for admitting that but I don't know why he cares. It's all my mess. ;)
