This hummus chicken salad is full of chicken breast, honey, mustard, hummus, apples, dried cranberries, and minced rosemary. It’s the perfect way to jazz up your average chicken salad.

Do you love chicken salad? Do you love hummus? Well, why not combine two for hummus chicken salad? It’s a delicious mix of honey, mustard, apples, rosemary, and dried cranberries. Plus, it’s protein-packed!
We served this on squishy white bread, but it’s also great when spooned on top of a leafy green salad or wrapped in a tortilla.
I’m using plain hummus and jazzing it up with honey, mustard, and some fresh herbs, but you can use whatever hummus you have on hand. Some lemon hummus would SHINE in this recipe.
As far as mix-ins go, use what you love! My personal favorites are apples and dried cranberries, so I added those.

How to make hummus chicken salad
I love protein-packed lunches and dinners, and this hummus chicken salad is just that! I also added a little honey mustard for an extra burst of flavor.
- Add your shredded chicken to a large mixing bowl.
- Whisk together hummus, Dijon mustard, honey, minced rosemary, kosher salt, and black pepper in a small bowl.
- Add apples and dried cranberries to your bowl with the chicken, and pour the hummus dressing overtop.
- Stir to combine and serve on bread, over salad, or straight from the bowl!

Substitutions and Adaptations
- Switch up the flavors: Instead of honey and mustard, add pesto, sun-dried tomatoes, grapes, nuts, or just a little garlic.
- Chicken options: If you don’t have time to pick up and shred a rotisserie chicken, you can use canned chicken, leftover grilled chicken, or chopped grilled chicken.
- How to serve: The traditional way to eat chicken salad is between two slices of bread, but why not switch it up? Try it wrapped in a tortilla, on a leafy salad, or in a quesadilla!

Hummus Chicken Salad

Ingredients
- 2 cups shredded rotissorie chicken
- ½ cup small diced green apple
- ½ cup small diced red apple
- ¼ cup dried cranberries
- ½ cup hummus
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 2 teaspoons lemon juice
- 1 tablespoon minced rosemary
- ½ teaspoon black pepper, to taste
- ¼ teaspoon kosher salt, to taste
Instructions
- In a large mixing bowl, add chicken, apples, and dried cranberries.
- In a small mixing bowl, whisk together hummus, Dijon mustard, honey, lemon juice, rosemary, black pepper, and kosher salt.
- Pour hummus mixture overtop the chicken mixture and stir to combine.
- Serve immediatly or store in the refrigerator for up to 4 days.
