But since I’m not in Mexico just yet I’m going to pretend it’s sunshiny and gorgeous outside by bringing you some of these no-bake white chocolate cheesecake phyllo bites.

Ladies and gentlemen – this is the dessert of the season!

I have always loved white chocolate and I think it pairs perfectly with vanilla beans and fresh raspberries.

PLUS it’s 100% perfect for Easter.

And it’s no-bake so it’s beyond easy.

While I do love baked cheesecake I really have a soft spot for no-bake cheesecake.

I’m also super happy to let you all know that I’m teaming up once again with Athens Foods to bring you all the delicious mini fillo shell-filled treats.

So naturally, that is why I’m giving you this recipe. It’s the perfect use for their mini fillo shells!

Which is my favorite easy appetizer or dessert crispy shell.

For this recipe, I just simply made my filling in my mixer, spooned it into my shells, topped it with raspberries, and chilled.

So. Delicious.

And if you’re anything like me the flavors of spring desserts are raspberries, white chocolate, lemon, and coconut.

Obviously not all those flavors together because that might be a little weird.

Oh, and did I mention that these babies are ready in JUST 15 minutes?

Ingredients 

  • 8 ounces cream cheese, room temperature
  • 1/3 cup white chocolate chips, melted and slightly cooled
  • 1/4 cup powdered sugar
  • 2 teaspoons vanilla bean paste
  • 2 (15 count) packages mini fillo shells, 30 shells in total
  • 30 fresh raspberries

Instructions 

  • In the bowl of a stand mixer add cream cheese and mix for 1 minute.
  • Add in melted white chocolate, powdered sugar, and vanilla bean paste.
  • Mix together on medium speed for 3 minutes until fluffy and combined.
  • Add filling to mini fillo shells and top each one with a fresh raspberry.
  • Chill and serve.

Notes

  • If you cannot find vanilla bean paste you can use vanilla extract for a 1:1 swap.
  • Phyllo cups DO NOT need to be heated but you can pop them in the oven to crisp up further if desired.

  1. Can I substitute vanilla instead of vanilla bean paste ? ( can’t find it anywhere and need to make these today )

    1. @Erin Mellett, Totally! Vanilla extract will work just as well but won’t have the tiny specks like you see from the vanilla bean.
