This butternut squash flatbread (with Brussels sprouts and bacon!) is packed full of autumnal flavor and cheesy cheddar cheese. It’s simple to make and ready in less than an hour!

I love nothing more than a simple and easy falltime dinner. This butternut squash flatbread combines fall ingredients, all topped on a crispy pizza crust and made cheesy with sharp cheddar cheese.
I really like shredding fresh, extra-sharp cheddar cheese for this recipe, but you can use whatever sharp cheddar you have on hand.
My personal favorite will always be Cabot extra sharp. So good!
As for bacon, I’m using a thick-cut style fried up extra crisp. You could use ham, Canadian bacon, or sausage crumbles if you’re not in the mood for bacon.
Also, can we talk about how I kept saying it had the three B’s of deliciousness – butternut squash, bacon, and Brussels sprouts?

Ingredients needed
- Pizza dough – homemade or storebought
- Olive oil – enough to brush the dough and toss our vegetables
- Garlic powder – this helps flavor the crust
- Shaved Brussels sprouts – give this pizza a delicious vegetable kick
- Butternut squash – preboiled or roasted
- Bacon – I love using crispy thick sliced bacon
- Spices – A mix of poultry seasoning, black pepper, and kosher salt
- Sharp cheddar cheese – The perfect sharp flavor to pair with all the toppings

Butternut Squash Flatbread Recipe Tips
Keep it fast and easy by using storebought pizza dough. Plain or whole wheat will work well in this recipe.
I’m using butternut squash here but any similar winter squash will work in a pinch. Try using honeynut, koginut, or delicata.
Use your favorite sharp cheddar cheese and grate it yourself! Remember you’ll need 2 cups in total.

Butternut Squash Flatbread

Ingredients
- 1 pound pizza dough, room temperature
- 3 tablespoons olive oil, divided
- 2 teaspoons garlic powder
- 2 cups shredded sharp cheddar cheese
- 1 cup shaved Brussels sprouts, about 10 medium-sized sprouts
- 1 cup small diced butternut squash, pre roasted or boiled
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon poultry seasoning
- ⅛ teaspoon kosher salt
- 6 slices bacon, crispy and crumbled
- 3 fresh sage leaves, finely minced
Instructions
- Preheat oven to 425 degrees F and line a 9×13 baking sheet with parchment paper or a silicone liner.
- Divide dough in half and press dough into 2 thin flatbread pizzas.
- Brush each dough with 1 tablespoon olive oil and 1 teaspoon garlic powder.
- In a small bowl, toss Brussels spouts, cooked butternut squash, black pepper, poultry seasoning, and kosher salt. Don't toss too aggresively or you'll crush the squash.
- Top each pizza with 1/2 cup cheese, half the brussels sprouts mixture and half the bacon.
- Finish by topping each pizza with remaining 1/2 cup cheese.
- Add to the oven and cook for 18-20 minutes or until the top is melted and the cheese is golden brown.
- Before serving sprinkle with fresh minced sage.
