This butternut squash flatbread (with Brussels sprouts and bacon!) is packed full of autumnal flavor and cheesy cheddar cheese. It’s simple to make and ready in less than an hour!

I love nothing more than a simple and easy falltime dinner. This butternut squash flatbread combines fall ingredients, all topped on a crispy pizza crust and made cheesy with sharp cheddar cheese.
I really like shredding fresh, extra-sharp cheddar cheese for this recipe, but you can use whatever sharp cheddar you have on hand.
My personal favorite will always be Cabot extra sharp. So good!
As for bacon, I’m using a thick-cut style fried up extra crisp. You could use ham, Canadian bacon, or sausage crumbles if you’re not in the mood for bacon.
Also, can we talk about how I kept saying it had the three B’s of deliciousness – butternut squash, bacon, and Brussels sprouts?
What more could you even need?

Ingredients needed
- Pizza dough – homemade or storebought
- Olive oil – enough to brush the dough and toss our vegetables
- Garlic powder – this helps flavor the crust
- Shaved Brussels sprouts – give this pizza a delicious vegetable kick
- Butternut squash – preboiled or roasted
- Bacon – I love using crispy thick sliced bacon
- Spices – A mix of poultry seasoning, black pepper, and kosher salt
- Sharp cheddar cheese – The perfect sharp flavor to pair with all the toppings
My Pro Tips
Butternut Squash Flatbread Recipe Tips
Keep it fast and easy by using storebought pizza dough. Plain or whole wheat will work well in this recipe.
I’m using butternut squash here but any similar winter squash will work in a pinch. Try using honeynut, koginut, or delicata.
Use your favorite sharp cheddar cheese and grate it yourself! Remember you’ll need 2 cups in total.

- 2 cups shredded sharp cheddar cheese
- 1 cup shaved Brussels sprouts, about 10 medium-sized sprouts
- 1 cup small diced butternut squash, pre roasted or boiled
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon poultry seasoning
- ⅛ teaspoon kosher salt
- 6 slices bacon, crispy and crumbled
- 3 fresh sage leaves, finely minced

- Divide dough in half and press dough into 2 thin flatbread pizzas.
- Brush each dough with 1 tablespoon olive oil and 1 teaspoon garlic powder.
- In a small bowl, toss Brussels spouts, cooked butternut squash, black pepper, poultry seasoning, and kosher salt. Don't toss too aggresively or you'll crush the squash.
- Top each pizza with 1/2 cup cheese, half the brussels sprouts mixture and half the bacon.
- Finish by topping each pizza with remaining 1/2 cup cheese.
- Add to the oven and cook for 18-20 minutes or until the top is melted and the cheese is golden brown.
- Before serving sprinkle with fresh minced sage.

Absolutely beautiful! This would be a huge hit here.
Ohhh my gahhhdd stop. I need this. I was dreaming about making brussels and bacon for dinner tonight, so you’re totally taunting my cravings with this flatbread! Pinned 🙂
Drooooooooling. This has me written all over it — I have been craving Brussels sprouts and with bacon AND butternut squash? Swoon!
Eeek! Scary movies and I do not get along. However, this flatbread and I could totally be BFF. I watched Poltergeist in broad daylight, with all the lights on, and every door to the house open–just in case I needed to run to safety. Yeah…I’m a big wuss.
This is so my kind of flatbread. Bacon! Brussels sprouts! Butternut squash! Love it all.
Love these flavors for a flatbread! Perfect way to switch up pizza night!
I hate clowns too. <– funny thing, my mom actually dressed me up as a clown for halloween. I was basically scared of myself. When I was younger I was deathly afraid of the Halloween movies. Now I don't find them scary.
This flatbread looks fantastic! Great flavor combo! And I have a few favorite scary movies including Rob Zombie’s version of Halloween. Watch it.
I’m a huge wimp, so scary movies and I don’t get along. I can definitely support this flatbread though – it looks amazing!
I love scary movies, the scarier the better. Both my kids love them too, so it’s sort of cool to go to see them at theatre together and then try to scare one another. We also love campy horror too. Think Cabin in the Woods, the audience the day we went was all seniors they brought in from a nursing home. They were all quiet and perplexed for the first bit. Then me and Kiana burst out laughing at some of the inside Whedon jokes. You heard them all whisper to each other “oh, it’s suppose to be funny”. We cracked up even harder.
I also love pizza as you know, so anything flatbread ranks right up there with it. This is beyond amazing. The perfect fall bite. I’ll be right over.
