I’m ALWAYS scrambling at dinner time. I mean, obviously I know how to cook, I have recipes I COULD cook but sometimes I just don’t want to cook. We’ve all been there, right? Luckily that is why I pretty much rely on simple recipes like these roasted chicken legs. They cook up super crispy and are coated in the perfect balance of kosher salt, black pepper and Italian seasoning. PLUS they pretty much get approved by everyone at the dinner table. Sometimes when I’m feeling like I want to add a little spice to my life I even throw in a dash of crushed red pepper. It’s crazy good y’all!

Now, if you’re not into Italian seasoning it’s cool. This recipe is so versatile you can use whatever spices float your boat – lemon pepper, Greek seasoning, Cajun seasoning, etc. It’s all about what flavors you love and the flavors you want at your dinner table. Just remember that if you a use premixed spice blend you might need to cut down on the kosher salt called for in the recipe. While I like to think any flavor will work on this chicken you still don’t want to turn your chicken into a crazy salt lick.

Also, can we talk about how good that crispy skin looks? It’s like a potato chip it’s so crisp! Make sure to leave that skin on before cooking or you’ll completely dry out your chicken. Remember – a little bit of fat helps keep that chicken super moist!

Roasted Chicken Legs

These roasted chicken legs are a simple dinner recipe that will please the whole family. Roasted till the skin is crispy and flavored with Italian blend seasoning. Plus they roast up in just 35 minutes!

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Ingredients:

  • 8 chicken legs
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon kosher salt (add less if desired)
  • 2 teaspoons pepper
  • 2 teaspoons Italian seasoning

 

Directions:

Preheat oven to 450 degrees.

Dry chicken with paper towel and set aside. In an 8×8 dish combine spices and mix together. Add enough oil to create a mixture that is just a little wetter than a paste. You want it to coat and stick to the chicken without being so wet that the herbs and spices drip off the chicken.

Place the chicken onto sided sheet pan. Cook in preheated oven for 30-35 minutes until skin is crispy and chicken is fully cooked.

Take out of the oven, let chicken rest for a few minutes and enjoy!

*A small note about the chicken. The oil might smoke a little while roasting the chicken. This is normal.

:) Grumpy complains when I do chicken legs....but I love them. They are inexpensive and fun! When I do make them I tell him just think of it as a large chicken wing drummie because he loves those!
